You Gotta Try Sarah Brunella’s Delicious Peach Galette Recipe

Summer will be over soon, so use its last days to make this delicious peach galette. Galette is a French word for flat crusty cakes that can be filled with anything you want, and this peach version by food blogger Sarah Brunella is one of our all-time favorites.

Here’s how to make it—the ingredients are enough for one big galette or 4 smaller galettes.

Ingredients

For the dough

  • 1 1/2 cups all-purpose flour
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 10 tbsp butter
  • 4-5 tbsp ice water

For the filling

  • 3-4 peaches
  • 1/8 tsp cinnamon
  • pinch of salt
  • 3 tbsp suger

Instructions

  • Use a food processor to mix the flour, salt, and butter for the dough until you get a mixture that looks like bread crumbs. Add water one spoon at a time and mix until you get a dough that holds together when you pinch it.
  • Dust the work surface with flour and put your dough on it. Make a rectangular-shaped pile and use your hands to smear it against the table. Work through all of the dough, gather it into a pile, and repeat.
  • Depending on how many galettes you’re making, separate the dough into as many pieces, wrap in plastic foil, and leave in the fridge for an hour.
  • Roll out the dough on parchment paper and place in the fridge for 20 minutes.
  • Preheat the oven to 375F and put the oven rack to the middle position.
  • Cut the peaches into thin wedges. Sprinkle cinnamon and salt over them, add sugar, and mix everything together. Put the fruit in the center of the dough you rolled but leave the border empty.
  • Fold the dough over the fruit, brush with water, and sprinkle a bit more sugar.
  • Bake until you get golden-brown tart and bubbling fruit. This may take from 40 minutes to an hour.
  • Let your galettes cool for 10 minutes before transferring them to a wire rack.
  • Best served with vanilla ice cream.
