Three Vegan Soups To Make With Your Immersion Blender

Immersion blenders are the handiest tool for making soups. Without having to transfer hot liquid to another container and making a mess, you can create beautiful, velvety soups in the same pot you cooked them in! If you have a dinner to plan or just lunch to make, check out these easy vegan soups.

Zucchini Soup

This soup is perhaps the easiest soup you will ever make. All you need is to saute onions, garlic, zucchini,  season with salt and pepper and add water. Once all the zucchini is completely soft, add a handful of dill and blend. This soup comes about amazing every time and requires no skill whatsoever.

Roasted Tomato

This recipe is robust with flavor. Roast tomatoes, garlic, and onions in the oven and take them out before the onions get too dark. Dump everything in a pot, add water, season with basil, oregano, and paprika, and blend!  Heat the mixture through for a few minutes to incorporate the flavors, and you have creamy tomato soup.

Ginger Carrot

This soup is similar to the zucchini soup except with a few changes in ingredients. Saute onions, add carrots, ginger, lemon juice and broth and boil until the carrots are soft. Blend, pour in coconut milk and heat through to combine the flavors.
