Fewer things are as comforting as a bowl of hot chicken soup and matzah balls. There’s a reason it’s called Jewish penicillin! The good news is, you don’t have to be a member of the tribe to enjoy this traditional dish of dumplings.

Ingredients:

  • 1/3 cup olive oil
  • ½ cup cold water or Seltzer
  • 2 eggs
  • ½ cup ground almonds
  • ½ teaspoon cinnamon 
  • ½ teaspoon kosher salt
  • 1 cup matzah meal

Instructions:

  1. Combine all the ingredients in a bowl, mixing thoroughly. 
  2. Cover the bowl with something like a dish towel and place in the fridge for 1 hour. 
  3. Wet your hands and form the mixture into balls.
  4. Add the balls to a pot of salted boiling water (or your chicken soup), and allow to simmer, covered, for 30 minutes to an hour.

If you’ve never had creamy potato soup, this is the best time to try this recipe. It’ll keep you warm during what’s left of this winter.

Ingredients:

  • 1.5 lb diced potatoes
  • 5 slices bacon
  • 2 cups warmed milk
  • 1 cup shredded sharp cheddar cheese
  • 3 tablespoons bacon grease or butter
  • 2 cups chicken or vegetable stock
  • 1/2 cup plain Greek yogurt or sour cream
  • 4 peeled and minced garlic cloves
  • 1/2 teaspoon freshly-cracked black pepper
  • 1/4 cup all-purpose flour
  • 1 teaspoon of sea salt
  • 1 cup diced white or yellow onion
  • chives, sour cream, bacon, shredded cheese for serving

Instructions:

  • Get a stockpot and cook the diced bacon until it becomes crispy. When it’s done, put it on a plate, making sure that you keep the bacon grease.
  • You only need 3 tablespoons of the bacon grease for cooking.
  • Cook the onion together with the grease for 5 minutes. You can then add the garlic and continue cooking for 1 to 2 minutes.
  • Include the flour and cook for 1 minute, while also mixing the ingredients together.
  • Add the stock in the mix together with the potatoes and the milk.
  • Wait for the soup to start simmering, then lower the heat.
  • Cover the stockpot with a lid and let it simmer for 10 to 15 minutes.
  • When the time is up, you can include sour cream, shredded cheese, pepper, bacon, and salt.
  • Your creamy potato soup is done. Top it off with extra bacon, shredded cheese, chives and any other toppings that you like.

  • 2 lb peeled and chopped carrots

Instructions:

  1. Cook the oil, carrots, celery, and onions together in a pot. Set the heat to medium-high.

  4. Now you can pour the chicken broth and wait for the mixture to start simmering. Once it does, lower the heat to medium.
  5. Add a lid to the pot and leave it to simmer for 15 to 20 minutes.
  6. When the time is up and carrots are soft transfer the whole carrot soup in a blender.
  7. Blend until you get a creamy consistency. Enjoy the warm soup right away.

You’ll be surprised to hear that Hungarians have one of the most amazing cuisines in the world. This cold sour cherry soup can be your go-to dish for the summer.

Ingredients:

To make this soup you need 1 cup sour cream, 6 cups water, 2 tablespoons flour, 1 pound pitted fresh sour cherries, 3/4 cup sugar, 1 teaspoon confectioners sugar, 1/4 teaspoon salt.

Instructions:

The traditional Hungarian sour cherry soup is very easy to make. You will need a large pan to start off. Fill it with 6 cups of water, the cherries, and 3/4 cup sugar. Cook all the ingredients together for 10 minutes.

While you’re waiting you can combine the sour cream, confectioners sugar, flour, and salt together. Mix them very well, to achieve a smooth consistency. Once the ingredients in the pot are done cooking, you can start adding that liquid together with the cherries in the sour cream mix. Add one or two ladles and stir the ingredients together. Then, combine this with the remaining cherry liquid in the pan. Let it simmer for 5 minutes. Make sure that it doesn’t boil.

When it’s done, leave the pan in an ice bath so that it cools down. You can store it in the fridge. You’re supposed to serve it cold. Feel free to add sour cream as a side.

1 small onion

Soups are the perfect meal for cold days. They are so easy to make, healthy and warm. What more could you ask for? This lentil soup is super tasty and fast to make.

Ingredients:

To make the delicious lentil soup you need to get 2 bay leaves, 900 mL no-salt chicken broth, 2 sprigs rosemary, 100 g. diced pancetta, 1 1/2 green lentils, 4 cups water, 2 diced carrots, 1/4 cup virgin olive oil, 1 diced large onion, 4 sprigs thyme, 3 minced garlic cloves, 3/4 teaspoons salt, 2/3 cup parmesan, 1/4 teaspoons pepper.

Method:

Get a large pot and fill it with the lentils, broth, rosemary, water and bay leaves. Set the heat on medium-high and wait for the content in the pot to boil. Once it does lower the heat to medium-low. Make sure that you mix constantly. Leave it to simmer for around 20 minutes.

Get a frying pan in the meantime, and add the olive oil. Set the heat on medium and start cooking the pancetta for around 5 minutes. Add the thyme, salt, garlic, pepper, carrots, and onions to the mix. You should cook them for 10 minutes and mix them often. This is when you should add the mix to the pot with lentils. Mix everything very well and leave the lentil soup to cook for 15 more minutes. When this is done, take out the rosemary, bay leaves, and thyme. Include the cheese to the soup and also decorate with parmesan.

If you’ve never had creamy potato soup, this is the best time to try this recipe. It’ll keep you warm during what’s left of this winter.

Ingredients:

  • 1.5 lb diced potatoes
  • 5 slices bacon
  • 2 cups warmed milk
  • 1 cup shredded sharp cheddar cheese
  • 3 tablespoons bacon grease or butter
  • 2 cups chicken or vegetable stock
  • 1/2 cup plain Greek yogurt or sour cream
  • 4 peeled and minced garlic cloves
  • 1/2 teaspoon freshly-cracked black pepper
  • 1/4 cup all-purpose flour
  • 1 teaspoon of sea salt
  • 1 cup diced white or yellow onion
  • chives, sour cream, bacon, shredded cheese for serving

Instructions:

  • Get a stockpot and cook the diced bacon until it becomes crispy. When it’s done, put it on a plate, making sure that you keep the bacon grease.
  • You only need 3 tablespoons of the bacon grease for cooking.
  • Cook the onion together with the grease for 5 minutes. You can then add the garlic and continue cooking for 1 to 2 minutes.
  • Include the flour and cook for 1 minute, while also mixing the ingredients together.
  • Add the stock in the mix together with the potatoes and the milk.
  • Wait for the soup to start simmering, then lower the heat.
  • Cover the stockpot with a lid and let it simmer for 10 to 15 minutes.
  • When the time is up, you can include sour cream, shredded cheese, pepper, bacon, and salt.
  • Your creamy potato soup is done. Top it off with extra bacon, shredded cheese, chives and any other toppings that you like.

  • 2 lb peeled and chopped carrots
  • 1/2 teaspoon paprika
  • 1 rib sliced celery
  • 1 diced small onion

Instructions:

  1. Cook the oil, carrots, celery, and onions together in a pot. Set the heat to medium-high.
  2. When you see that the onion has a golden brown color you can include the paprika, salt, pepper, ginger, and garlic.
  3. Continue cooking for 1 more minute.
  4. Now you can pour the chicken broth and wait for the mixture to start simmering. Once it does, lower the heat to medium.
  5. Add a lid to the pot and leave it to simmer for 15 to 20 minutes.
  6. When the time is up and carrots are soft transfer the whole carrot soup in a blender.
  7. Blend until you get a creamy consistency. Enjoy the warm soup right away.

You’ll be surprised to hear that Hungarians have one of the most amazing cuisines in the world. This cold sour cherry soup can be your go-to dish for the summer.

Ingredients:

To make this soup you need 1 cup sour cream, 6 cups water, 2 tablespoons flour, 1 pound pitted fresh sour cherries, 3/4 cup sugar, 1 teaspoon confectioners sugar, 1/4 teaspoon salt.

Instructions:

The traditional Hungarian sour cherry soup is very easy to make. You will need a large pan to start off. Fill it with 6 cups of water, the cherries, and 3/4 cup sugar. Cook all the ingredients together for 10 minutes.

While you’re waiting you can combine the sour cream, confectioners sugar, flour, and salt together. Mix them very well, to achieve a smooth consistency. Once the ingredients in the pot are done cooking, you can start adding that liquid together with the cherries in the sour cream mix. Add one or two ladles and stir the ingredients together. Then, combine this with the remaining cherry liquid in the pan. Let it simmer for 5 minutes. Make sure that it doesn’t boil.

When it’s done, leave the pan in an ice bath so that it cools down. You can store it in the fridge. You’re supposed to serve it cold. Feel free to add sour cream as a side.

Every time you prepare soup in the winter, it feels like the best thing ever. New and delicious recipes are always welcomed. If you like tomatoes and lentils, you will want to make the lentil tomato soup at least once a week.

Ingredients

You will need to get:
1 small onion
100 ml vegetable stock
1 garlic clove

200 g tinned chopped tomatoes

30 g red lentils

Soups are the perfect meal for cold days. They are so easy to make, healthy and warm. What more could you ask for? This lentil soup is super tasty and fast to make.

Ingredients:

To make the delicious lentil soup you need to get 2 bay leaves, 900 mL no-salt chicken broth, 2 sprigs rosemary, 100 g. diced pancetta, 1 1/2 green lentils, 4 cups water, 2 diced carrots, 1/4 cup virgin olive oil, 1 diced large onion, 4 sprigs thyme, 3 minced garlic cloves, 3/4 teaspoons salt, 2/3 cup parmesan, 1/4 teaspoons pepper.

Method:

Get a large pot and fill it with the lentils, broth, rosemary, water and bay leaves. Set the heat on medium-high and wait for the content in the pot to boil. Once it does lower the heat to medium-low. Make sure that you mix constantly. Leave it to simmer for around 20 minutes.

Get a frying pan in the meantime, and add the olive oil. Set the heat on medium and start cooking the pancetta for around 5 minutes. Add the thyme, salt, garlic, pepper, carrots, and onions to the mix. You should cook them for 10 minutes and mix them often. This is when you should add the mix to the pot with lentils. Mix everything very well and leave the lentil soup to cook for 15 more minutes. When this is done, take out the rosemary, bay leaves, and thyme. Include the cheese to the soup and also decorate with parmesan.
