Bruges is an incredibly idyllic city that has lots to offer in terms of food, beer, and architecture. With a medieval history and beautiful canal walks, it is a city that is well worth a visit and deserves its title as ‘Venice of the North’. Here are three things to do when you’re in Bruges.

Food and beer

The local cuisine is quite meat and fish heavy and one of the most notable local dishes is waterzooi, which is a stew dish that can be made with either fish or chicken. Many restaurants in Bruges also serve stewed rabbit, which is delicious as a gamier alternative to beef. If you are into your beer, then this is one of the main attractions in Bruges, as good quality Belgian beer is everywhere. Likewise, high quality chocolatiers can be found throughout the center, and there are multiple chocolate factories which give you an insight into the history and production process.

Belfry of Bruges

The Belfry is an incredible piece of architecture and overlooks the main square in Bruges. It plays a significant role in the film ‘In Bruges’, and you can walk up the bell tower and get great views of the surrounding area. On certain days, there is also an amazing musical performance known as a carillon concert, which is a series of bells in the tower that are synchronized to play different pieces of music.

Canal walks

Everywhere in Bruges is beautiful and you can simply follow a canal path and take in some stunning architecture and unique scenery. You can also find your way to a series of windmills via the canal paths, some of which are still operational.

Yogurt has myriad health benefits, especially when we opt for unsweetened, bio-live yogurt which is full of gut-loving nutrients. But sometimes yet another breakfast of yogurt and granola can feel a little boring. Here are three ways to get more of the good stuff into your daily diet.

Salad Dressing

Ready in under five minutes, this will add interest and zing to your favorite salad. Simply whisk two tablespoons of yogurt with one clove of minced garlic, the juice of half a lemon, and a drizzle of olive oil. Season generously with salt and pepper, then pour over your favorite salad or roast vegetables.

Soup

There are recipes for yogurt-based soups, but you can also just add plain yogurt (thinned with a little water) into any soup recipe which calls for milk. This makes for a really creamy soup that’s brimming with amazing nutrients.

Marinade

Yogurt-based marinades are fantastic at keeping meat dishes succulent. This simple recipe can be adapted according to your preferences. In a large bowl, mix three tablespoons of yogurt with one tablespoon of olive oil, the juice of half a lemon and one teaspoon of lemon zest. Fermented foods are all the rage these days, as they’re associated with numerous health benefits as well as being super tasty. The probiotics found in foods such as Greek yogurt, kimchi and kombucha are known for helping out with gut health.

Kefir is another exciting fermented food that helps the gut microbiome, and with a few simple ingredients is easy to make at home. 

How to make Kefir

Firstly you need kefir grains which can easily be bought online. They are living organisms, so need to be ‘fed’ to keep going. For the best results, use organic full-fat dairy milk, as this contains the enzymes needed for the kefir-making process.

Put the milk and kefir grains in a large non-metal container, and cover with a cloth and elastic band. Keep at room temperature for roughly 24 hours. Placing this mixture in the fridge will halt the fermentation process.

When ready, strain using a muslin cloth. The strained liquid can then be used immediately, or stored in the fridge. Add more milk to the kefir grains, and leave for another 24 hours. 

Once this becomes more familiar, you can play around with the milk to kefir grains ratio, as well as the timing, to get your desired result.

Often when we think of peanut butter, our minds jump to the classic peanut butter and jelly combo. But peanut butter is one of the most versatile products, and here are three exciting ways to try it.

Peanut Butter Hot Chocolate

Another classic pairing is the wonderful peanut butter with chocolate. They both bring out an extra level of decadence in each other, and work well in a hot drink. Make your usual hot chocolate and then just stir in a teaspoon of peanut butter. 

Energy Balls

Peanut butter doesn’t have to always be super indulgent, and is a great ingredient due to its healthy fats and protein. In a large bowl, combine 100g of oats, 50g of desiccated coconut, 50g of raisins and two tablespoons of peanut butter. Roll into balls, pop in the freezer, and remove an hour before needed. A perfect energy hit for when on the go.

Stir Fry Sauce

As amazing as peanut butter is in a sweet context, it also works great in savory settings. Just mix one tablespoon of peanut butter with a tablespoon of chili oil, a tablespoon of rice vinegar and a teaspoon of honey. Add this to your favorite stir fry recipe.

Quick cook polenta can be stirred into hot water and ready on the table in around five minutes. It’s delicious with grated mozzarella stirred through in the last moments and a rich tomato sauce. It can also be left to cool, before being fried in plenty of butter to make a kind of polenta chip.

Gluten Free Alternatives

If you’re seeking some more interesting gluten-free alternatives, explore the aisles of your local health food shop. Grains including buckwheat (gluten-free, despite the name), amaranth and quinoa are delicious when used like cous-cous. Everyone loves some good hummus, but not everyone likes theirs the same way. There are plenty of ways to vary a hummus recipe. Here’s how to get yours to your exact preference.

The Main Components

To make basic hummus, you simply need to blend chickpeas with tahini in a food processor. Then add in crushed garlic, lemon juice, ice-cold water, and salt. The measurements of each ingredient, however, are up to you.

Smooth Hummus

When you have a bunch of tuna cans just sitting in the pantry, there is no better time to make a delicious dish of tuna lasagna. If you can believe it, mixing tuna and lasagna happens to be one of the most unique and flavorsome recipes. The additional protein from the tuna in this classic recipe makes it very filling but still rich and cheesy.

Ingredients:

  • 2 14 oz tuna cans based in olive oil
  • 1 1/3 cups of heavy cream
  • 3 1/3 cups of canned tomato sauce 
  • Herbs of your choice (recommended: Italian spice mix, dry oregano, dry basil, salt, pepper)
  • A packet of lasagna sheets
  • Grated cheeses of your choice (recommended: cheddar and mozzarella)

Method:

  1. Heat up the oven to 395 degrees.
  2. In a pot over the stove, warm up the tuna.
  3. Once the tuna is hot, add the heavy cream, canned tomato sauce, and herbs and mix well.
  4. In a big baking pan, layer the sauce and pasta sheet layers on top of each other one at a time. Add grated cheese on top and don’t be shy.
  5. Place into the oven and cook for 45 minutes or until the cheese has browned on top. Top with fresh basil and voila!; the most delicious lasagna recipe with lots of protein.

Fermented foods are all the rage these days, as they’re associated with numerous health benefits as well as being super tasty. The probiotics found in foods such as Greek yogurt, kimchi and kombucha are known for helping out with gut health.

Kefir is another exciting fermented food that helps the gut microbiome, and with a few simple ingredients is easy to make at home. 

How to make Kefir

Firstly you need kefir grains which can easily be bought online. They are living organisms, so need to be ‘fed’ to keep going. For the best results, use organic full-fat dairy milk, as this contains the enzymes needed for the kefir-making process.

Put the milk and kefir grains in a large non-metal container, and cover with a cloth and elastic band. Keep at room temperature for roughly 24 hours. Placing this mixture in the fridge will halt the fermentation process.

When ready, strain using a muslin cloth. The strained liquid can then be used immediately, or stored in the fridge. Add more milk to the kefir grains, and leave for another 24 hours. 

Once this becomes more familiar, you can play around with the milk to kefir grains ratio, as well as the timing, to get your desired result.

Often when we think of peanut butter, our minds jump to the classic peanut butter and jelly combo. But peanut butter is one of the most versatile products, and here are three exciting ways to try it.

Peanut Butter Hot Chocolate

Another classic pairing is the wonderful peanut butter with chocolate. They both bring out an extra level of decadence in each other, and work well in a hot drink. Make your usual hot chocolate and then just stir in a teaspoon of peanut butter. 

Energy Balls

Peanut butter doesn’t have to always be super indulgent, and is a great ingredient due to its healthy fats and protein. In a large bowl, combine 100g of oats, 50g of desiccated coconut, 50g of raisins and two tablespoons of peanut butter. Roll into balls, pop in the freezer, and remove an hour before needed. A perfect energy hit for when on the go.

Stir Fry Sauce

As amazing as peanut butter is in a sweet context, it also works great in savory settings. Just mix one tablespoon of peanut butter with a tablespoon of chili oil, a tablespoon of rice vinegar and a teaspoon of honey. Add this to your favorite stir fry recipe.

There are many reasons why someone may choose to stop eating gluten, but it doesn’t have to feel restricting. Whether you’ve been diagnosed as coeliac, or just feel like trying a week without any wheat, there are plenty of alternative grains and foods that can be eaten instead.

Polenta

Quick cook polenta can be stirred into hot water and ready on the table in around five minutes. It’s delicious with grated mozzarella stirred through in the last moments and a rich tomato sauce. It can also be left to cool, before being fried in plenty of butter to make a kind of polenta chip.

Gluten Free Alternatives

If you’re seeking some more interesting gluten-free alternatives, explore the aisles of your local health food shop. Grains including buckwheat (gluten-free, despite the name), amaranth and quinoa are delicious when used like cous-cous. Stir them through salads, mix them into stews, or serve as part of a large sharing platter. Of course, all grains benefit from being livened up with interesting dressings. Try mixing a little apple cider vinegar (in place of balsamic) with olive oil, salt and pepper, for a super healthy addition to a quinoa salad.

Pastas

Of course, when you’re really craving pasta there are plenty of excellent pre-made gluten free options available. This is perhaps one of the simplest options, as you can cook the pasta according to packet instructions and just add your favorite sauce.

Everyone loves some good hummus, but not everyone likes theirs the same way. There are plenty of ways to vary a hummus recipe. Here’s how to get yours to your exact preference.

The Main Components

To make basic hummus, you simply need to blend chickpeas with tahini in a food processor. Then add in crushed garlic, lemon juice, ice-cold water, and salt. The measurements of each ingredient, however, are up to you.

Smooth Hummus

If you want your hummus to be silky smooth so that you can effortlessly glide a cracker through it, simply add more ice water to the mixture to give it a more runny consistency.

Chunky Hummus

If you are more of a chunky hummus person, you want there to be less water in your mixture so that it will be more of a thick paste. You can even add in some whole chickpeas if you want.

Tahini

If you’re all about the flavor, adding more tahini to the mix will give your hummus a rich, creamy taste.

Lemon Juice

When you have a bunch of tuna cans just sitting in the pantry, there is no better time to make a delicious dish of tuna lasagna. If you can believe it, mixing tuna and lasagna happens to be one of the most unique and flavorsome recipes. The additional protein from the tuna in this classic recipe makes it very filling but still rich and cheesy.

Ingredients:

  • 2 14 oz tuna cans based in olive oil
  • 1 1/3 cups of heavy cream
  • 3 1/3 cups of canned tomato sauce 
  • Herbs of your choice (recommended: Italian spice mix, dry oregano, dry basil, salt, pepper)
  • A packet of lasagna sheets
  • Grated cheeses of your choice (recommended: cheddar and mozzarella)

Method:

  1. Heat up the oven to 395 degrees.
  2. In a pot over the stove, warm up the tuna.
  3. Once the tuna is hot, add the heavy cream, canned tomato sauce, and herbs and mix well.
  4. In a big baking pan, layer the sauce and pasta sheet layers on top of each other one at a time. Add grated cheese on top and don’t be shy.
  5. Place into the oven and cook for 45 minutes or until the cheese has browned on top. Top with fresh basil and voila!; the most delicious lasagna recipe with lots of protein.
