Healthy, Easy Avocado Recipes

For all the avocado lovers out there, you know that this vegetable doesn’t need many additions to taste delicious. Just add some salt or balsamic vinegar and you are ready to go. If you want to try something a little fancier then try some of the recipes below. You’ll only need an avocado and one more ingredient and they are all really easy to make.

Poached Eggs and Avocado

Fill a deep bowl with cold water and crack an egg gently into the water. Microwave for 2 minutes on a low setting. Drain the water from the poached egg and put in the middle of a perfectly pitted half avocado.

Avocado Smoothie with Berries

Blend together 1 cup of frozen berries and half an avocado until smooth. Great for mornings when you don’t have time to eat breakfast.

Avocado Salad Dressing

Juice one lime and blend with one avocado. The lime preserves the avocado so you can make enough for the week and refrigerate it. Put on any salad for a tasty dressing.

Avocado Chocolate Mousse

Mix one ripe avocado with ⅓ cup sweetened hot cocoa mix. Blend until completely smooth. Eat for dessert.

Avocado Devilled Eggs

Put 6 eggs in a pan of water and hard boil for 12 minutes. While the eggs are cooling, blend an avocado until smooth. Peel the eggs, halve them and take out the yolk, blend the yolks with the avocado. Pipe the yolk and avocado mixture onto the eggs for a new taste.
