Finnish Off Winter With a Warm Corn Chowder

The warm corn chowder recipe below is delicious, healthy, and easy to make. It’s one of those recipes you’ll want to make all the time.

Ingredients:

  • 4-5 ears of sweet corn, kernels removed from the cob, make sure to keep the cob as well
  • 4 1/2 cups milk
  • 1 tablespoon butter
  • 1/3 cup diced red bell pepper
  • 2 medium yukon gold potatoes, peeled and diced into pieces
  • 1/2 chopped large yellow onion
  • 3 teaspoons kosher salt
  • 1 bay leaf
  • 1 strip bacon
  • 1 teaspoon fresh thyme leaves
  • 1/2 cup small diced onion
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup small-diced celery

Instructions:

  • Start by getting a big pot and melting the butter. Cook the bacon for 3 to 4 minutes.
  • You can next include the bell pepper, celery, onions, and carrot. Set the heat to medium-low and cook all the ingredients together for 5 minutes.
  • Cut each corn cob in half and place them in the pot as well.
  • Pour in the milk, then add the bay leaf. Wait for the mixture to start boiling.
  • Once it does, lower the heat and let it simmer very gently for 20 minutes.
  • When the time is up, include the salt, potatoes and thyme. Turn up the heat and let the corn chowder simmer, then lower the heat once again. Leave it on the stove for 10 minutes.
  • Remove the bacon strip, bay leaf, and cobs.
  • Pour in the black pepper and corn kernels. Turn up the heat for the soup to simmer, reduce the heat and let it cook for 5 minutes. Serve immediately.
