The crunching of the peanuts, the mix of sour and salty that comes with the wave of spices – this is pad thai. You can take out this popular fried noodle dish in almost every street food shop and restaurant in Thailand.
This version of pad thai is catered towards vegetarians and people opting for a meat-free alternative. Traditional pad thai is made with seafood – but we’ve found that this recipe is equally as satisfying.
Ingredients
- 100g rice noodles (soaked for 15 minutes before)
- 50g white onion
- 200g firm tofu
- 20g chives
- 3 tbsp oil
- 20g tamarind paste
- 5 – 8 tbsp soy sauce
- 50g bean sprouts
- roasted peanuts
- organic peanut butter (optional)
- garlic clove
- lime wedge
Instructions
- Soak rice noodles for 30 minutes.
- Fry garlic, onion and bean sprouts.
- Cook tofu and add spices.
- Add a spoonful of peanut butter (if you want it to be more peanut-y).
- Place rice noodles into pan and fry everything together.
- Add a little water.
- Garnish with peanuts and lime wedges.
