This 3-Course Mediterranean Meal is the Perfect Solution to Last Minute Dinner Parties

Have you ever been in the position where you find out that you’re going to be hosting a dinner party in 2 hours, 1 hour, or even 30 minutes in advance? Then you know the stress that can come with it. Luckily, you can make this Mediterranean feast with time to spare.


This salad is fresh and simple – the perfect way to start a meal. All you have to do is finely diced tomatoes and cucumbers and put them in a bowl. You can also add red onion or bell peppers. Chop up fresh herbs like cilantro, dill, mint, or parsley if you have them, and then dress it really simply with olive oil and lemon juice and the first course is done!

Main Course

Start by putting some couscous into a bowl with a lid or a plate large enough to cover it. Mix in salt, paprika, and cumin, and then pour hot water over it and cover the mix for 10 minutes. Drain and rinse a can or more of chickpeas and roast them in the oven with the same spices or cook them on the stove.


An easy hack to dessert is to simply serve regular vanilla ice cream, but dress it up by drizzling honey and chopped pistachios on top. This also works great with frozen yogurt if you have it!
