During November, we celebrate both World Vegan Day and National Sandwich Day, so we thought we would explore the best of both worlds. Going vegan has become a popular trend for both healthy eaters and animal rights activists. More and more people are committing to a vegan diet in recent years, and for great reasons. Veganism is compassionate to animals, it’s good for the environment, and it’s good for your health—provided that you make the effort to get in all the essential macro and micronutrients. Vitamin B-12

For many foodies, the thought of a vegan meal is a daunting one. But thanks to some clever vegan recipes and ideas available on the Internet, vegan food can not only be unscary, it can actually be delicious!

Case in point: Michaela Vais’ food blog ElaVegan. A food stylist and recipe creator, Vais is passionate about healthy vegan food. Her online platform includes recipes for healthy and delicious vegan dishes that are also mostly sugar-free, gluten-free, and easy to make.

You will find desserts such as cakes and brownies, as well as main dishes and even fast food-turned vegan. “My goal is to show that eating plant-based food is healthy, delicious, good for our bodies and for our planet,” writes Vais on her website. “I believe the food Mother Nature created for us was not meant to harm our bodies, our planet and kill billions of innocent animals.”

According to Vais she stopped eating meat by the age of 6, and became a strict vegan much later, in 2011. “Going vegan was the best decision in my life,” she writes. “Knowing that I don’t participate in the torture and exploitation of farm animals brought inner peace to myself. I feel much more energized since eating plant-based food, I lost some weight and I cured my cystic acne!”

We all love a cheesy, creamy, super-rich, delicious white sauce. It’s perfect in lasagne, in a moussaka, or tarragon chicken. But what about if you are dairy-free, lactose intolerant, or vegan?

Do not despair! This super easy, super cheesy, totally delicious and dairy-free white sauce recipe will have your guests and friends in complete disbelief that it’s not the real thing!

To start with, simply heat a little oil in a pan, and add a couple of tablespoons of white flour. Mix into a paste over the heat until it becomes bubbly and golden. Then slowly pour in about half a cup of soy milk, stirring it in as you go to make it thick and rich.

At this point, you can also add a handful of vegan cheese, although this is totally optional. If you are adding cheese, add it bit by bit, so it melts slowly into the mixture.

Keep stirring and adding soy milk until the sauce is deliciously thick and gooey. Then add salt, pepper, and a sprinkle of nutmeg. You can also add a sprinkle of garlic powder if that’s your thing!

If you’re pouring it over a dish before baking, you can also add a scattering of breadcrumbs, to make it even more delicious and rich.

Or, you know, just eat it straight from the pot with a spoon. We won’t judge.

You can’t beat an amazing broccoli salad filled with cranberries and cashews. Not only is it really healthy it is also really filling and tasty and filled with goodness. This is a great salad to bring to a BBQ for vegetarians and vegan guests as it is filled with lots of protein. Here is the recipe.

Ingredients

  • 4 Cups Broccoli, cut into small pieces
  • 1/2 cup Cilantro, chopped roughly
  • 1/4 cup diced Red Onion
  • 1/4 cup Dried unsweetened cranberries, roughly chopped
  • 2 Tbsp Sunflower seeds
  • 2 Tbsp Roasted salted Cashews, chopped

Dressing:

  • 3/4 Cup Roasted, Salted Cashews soaked in water overnight (105g)
  • 5 1/2 Tbsp Water
  • 1 Tbsp Apple Cider Vinegar
  • 4 tsp Yellow curry powder
  • 2 1/2 tsp Honey (or agave for vegan)
  • 1/2 tsp Salt
  • Pinch of pepper

Instructions

  • Drain the cashews and place them in a food processor with all the dressing ingredients and blend them together until smooth and creamy. It might take a few minutes.
  • In a large bowl, mix together the broccoli, red onion, cilantro, and cranberries.
  • Add the dressing and make sure all the vegetables are coated. Cover and refrigerate, for at least an hour, to let the flavors mix together.
  • Add the sunflower seeds and cashews before serving.

With nearly one in four Americans reducing their amount of meat intake, plant-based meat is becoming more popular than ever. Impossible Burgers and Beyond Meat are part of the menu of many fast-food restaurants and they can be found in almost any grocery store. Here’s what you should know about plant-based meat.

What’s Plant-Based Meat?

The ingredients in plant-based meat differ across brands, but basically the texture and taste of ground beef are replicated by using plant proteins made of soy, peas, beans, rice, and wheat. To achieve the pink color of beef, pomegranate juice, fruit powder, and other fruits and vegetables are used.

Nutrients

The amount of protein in plant-based meat and 80% lean ground beef doesn’t differ—they both contain around 20 grams of protein per 4-ounce patty. Plant-based meat does have fewer calories and fat and it has no cholesterol. But, it has more sodium than real beef—370 to 580 mg compared to 80 mg in unseasoned meat.

Where Can You Find It?

In supermarkets, plant-based meats are usually found next in the refrigerator meat case next to real beef. They also don’t differ significantly in price to real beef.

With the popularity of plant-based meat alternatives, many restaurants and fast-food chains have plant-based options on their menu. But, if you’re vegetarian or vegan, make sure before you order the burger to ask how it is prepared to avoid cross-contamination.

How Do You Cook It?

If you know how to cook ground beef, you know how to prepare plant-based meats as they are cooked the same. Just refer to the packaging for specific tips and cooking temperatures. Be aware that not all plant-based meats will turn dark brown like real meat does.

If you’re looking for a healthy snack, these broccoli cheddar quinoa bites are perfect for you. They are a great alternative to sugary energy bars or processed snacks. Kids will also love them as they are fun to make and a great lunch box addition.

Keep in mind you can add any type of vegetable, not just broccoli. Try them with zucchini, red peppers, or carrots. These muffins can be frozen so you will always have something to snack when you don’t want to cook. And the best part is, this recipe is egg-free and can be made without the cheese, or with vegan cheese, so it can be completely vegan.

Ingredients

  • 1/2 cup uncooked quinoa (80g)
  • 1 1/4 cup water
  • 1/4 tsp salt
  • 2/3 cup finely chopped broccoli
  • 1/2 cup cheese shreds or nutritional yeast
  • 1/2 tsp baking powder
  • 1/4 tsp onion powder
  • 1/8 tsp garlic powder
  • salt + pepper

Instructions

  • Line a muffin tin and set aside.
  • Cook the quinoa by bringing the water to a boil, add some salt and cover, lower to simmer and keep simmering for 35 minutes. Turn off the heat and leave in the pan for 5 mins.
  • Preheat the over to 350F degrees
  • Add all the remaining ingredients to the quinoa, add some salt and pepper.
  • Spoon the quinoa into the muffin tin and smooth the tops
  • Bake for 22 minutes and then turn off the oven (and without opening it) leave the muffins in for another 5 minutes.
  • Cool completely and then remove from the muffin tin

Ingredients:

  • 8 manicotti shells
  • 1/2 cup onions
  • 1 15-oz tomato sauce
  • 2 teaspoons garlic powder
  • 1 batch vegan ricotta
  • 1/2 cup spinach
  • 1 batch vegan parmesan cheese
  • 4 cloves garlic
  • 1 cup chopped mushrooms
  • salt
  • pepper

Instructions:

  1. Start by cooking the onions and garlic with a little oil for 3 minutes.
  2. Add the mushrooms and continue cooking for two more minutes.
  3. In the meantime, you can prepare the manicotti shells according to the instructions on the packaging.
  4. Add the spinach to the mushroom mix and remove the pan from the heat.
  5. Include one half of the vegan Parmesan and ricotta.
  6. Add pepper and salt to your taste.
  7. Set the oven to 415 F degrees and prepare a casserole dish.
  8. You can now start layering the vegan manicotti.
  9. Add tomato sauce on the bottom, then fill up the shells with the mushroom mix. Place them on top of the tomato sauce.
  10. Top it off with the rest of the tomato sauce, then add the other half of the Parmesan.
  11. Leave the casserole dish in the oven for half an hour.

The Instagram account @minimalistbaker has been a haven for vegans and gluten-free folks for many years. There are all sorts of recipes on the account and they are all with 10 ingredients or less. But, a couple of weeks ago, the head of the account announced that they were moving away from strictly vegan recipe and instead, incorporating animal products into the recipes quite soon. The account has 1.5 million followers, and once they heard about the change, people had things to say.

A lot of people seemed disappointed with the account’s choice to change the format of the recipe to incorporate ingredients that weren’t plant-based, but more than anything, people were confused. Everyone, later on, found out that head of the account was experiencing a lot of negative side effects from eating a plant-based diet, such as digestion problems, low B12, and iron, as well as hair loss.

After this announcement, some people became more understanding, as they really should. No one should have room to judge another person’s diet, and the most important thing is to always listen to your body. For now, almost all the recipes on the account are still plant based, but in the upcoming weeks it will change to have regular gluten-free recipes with animal product additions.

For many foodies, the thought of a vegan meal is a daunting one. But thanks to some clever vegan recipes and ideas available on the Internet, vegan food can not only be unscary, it can actually be delicious!

Case in point: Michaela Vais’ food blog ElaVegan. A food stylist and recipe creator, Vais is passionate about healthy vegan food. Her online platform includes recipes for healthy and delicious vegan dishes that are also mostly sugar-free, gluten-free, and easy to make.

You will find desserts such as cakes and brownies, as well as main dishes and even fast food-turned vegan. “My goal is to show that eating plant-based food is healthy, delicious, good for our bodies and for our planet,” writes Vais on her website. “I believe the food Mother Nature created for us was not meant to harm our bodies, our planet and kill billions of innocent animals.”

According to Vais she stopped eating meat by the age of 6, and became a strict vegan much later, in 2011. “Going vegan was the best decision in my life,” she writes. “Knowing that I don’t participate in the torture and exploitation of farm animals brought inner peace to myself. I feel much more energized since eating plant-based food, I lost some weight and I cured my cystic acne!”

We all love a cheesy, creamy, super-rich, delicious white sauce. It’s perfect in lasagne, in a moussaka, or tarragon chicken. But what about if you are dairy-free, lactose intolerant, or vegan?

Do not despair! This super easy, super cheesy, totally delicious and dairy-free white sauce recipe will have your guests and friends in complete disbelief that it’s not the real thing!

To start with, simply heat a little oil in a pan, and add a couple of tablespoons of white flour. Mix into a paste over the heat until it becomes bubbly and golden. Then slowly pour in about half a cup of soy milk, stirring it in as you go to make it thick and rich.

At this point, you can also add a handful of vegan cheese, although this is totally optional. If you are adding cheese, add it bit by bit, so it melts slowly into the mixture.

Keep stirring and adding soy milk until the sauce is deliciously thick and gooey. Then add salt, pepper, and a sprinkle of nutmeg. You can also add a sprinkle of garlic powder if that’s your thing!

If you’re pouring it over a dish before baking, you can also add a scattering of breadcrumbs, to make it even more delicious and rich.

Or, you know, just eat it straight from the pot with a spoon. We won’t judge.

You can’t beat an amazing broccoli salad filled with cranberries and cashews. Not only is it really healthy it is also really filling and tasty and filled with goodness. This is a great salad to bring to a BBQ for vegetarians and vegan guests as it is filled with lots of protein. Here is the recipe.

Ingredients

  • 4 Cups Broccoli, cut into small pieces
  • 1/2 cup Cilantro, chopped roughly
  • 1/4 cup diced Red Onion
  • 1/4 cup Dried unsweetened cranberries, roughly chopped
  • 2 Tbsp Sunflower seeds
  • 2 Tbsp Roasted salted Cashews, chopped

Dressing:

  • 3/4 Cup Roasted, Salted Cashews soaked in water overnight (105g)
  • 5 1/2 Tbsp Water
  • 1 Tbsp Apple Cider Vinegar
  • 4 tsp Yellow curry powder
  • 2 1/2 tsp Honey (or agave for vegan)
  • 1/2 tsp Salt
  • Pinch of pepper

Instructions

  • Drain the cashews and place them in a food processor with all the dressing ingredients and blend them together until smooth and creamy. It might take a few minutes.
  • In a large bowl, mix together the broccoli, red onion, cilantro, and cranberries.
  • Add the dressing and make sure all the vegetables are coated. Cover and refrigerate, for at least an hour, to let the flavors mix together.
  • Add the sunflower seeds and cashews before serving.

With nearly one in four Americans reducing their amount of meat intake, plant-based meat is becoming more popular than ever. Impossible Burgers and Beyond Meat are part of the menu of many fast-food restaurants and they can be found in almost any grocery store. Here’s what you should know about plant-based meat.

What’s Plant-Based Meat?

The ingredients in plant-based meat differ across brands, but basically the texture and taste of ground beef are replicated by using plant proteins made of soy, peas, beans, rice, and wheat. To achieve the pink color of beef, pomegranate juice, fruit powder, and other fruits and vegetables are used.

Nutrients

The amount of protein in plant-based meat and 80% lean ground beef doesn’t differ—they both contain around 20 grams of protein per 4-ounce patty. Plant-based meat does have fewer calories and fat and it has no cholesterol. But, it has more sodium than real beef—370 to 580 mg compared to 80 mg in unseasoned meat.

Where Can You Find It?

In supermarkets, plant-based meats are usually found next in the refrigerator meat case next to real beef. They also don’t differ significantly in price to real beef.

With the popularity of plant-based meat alternatives, many restaurants and fast-food chains have plant-based options on their menu. But, if you’re vegetarian or vegan, make sure before you order the burger to ask how it is prepared to avoid cross-contamination.

How Do You Cook It?

If you know how to cook ground beef, you know how to prepare plant-based meats as they are cooked the same. Just refer to the packaging for specific tips and cooking temperatures. Be aware that not all plant-based meats will turn dark brown like real meat does.

If you’re looking for a healthy snack, these broccoli cheddar quinoa bites are perfect for you. They are a great alternative to sugary energy bars or processed snacks. Kids will also love them as they are fun to make and a great lunch box addition.

Keep in mind you can add any type of vegetable, not just broccoli. Try them with zucchini, red peppers, or carrots. These muffins can be frozen so you will always have something to snack when you don’t want to cook. And the best part is, this recipe is egg-free and can be made without the cheese, or with vegan cheese, so it can be completely vegan.

Ingredients

  • 1/2 cup uncooked quinoa (80g)
  • 1 1/4 cup water
  • 1/4 tsp salt
  • 2/3 cup finely chopped broccoli
  • 1/2 cup cheese shreds or nutritional yeast
  • 1/2 tsp baking powder
  • 1/4 tsp onion powder
  • 1/8 tsp garlic powder
  • salt + pepper

Instructions

  • Line a muffin tin and set aside.
  • Cook the quinoa by bringing the water to a boil, add some salt and cover, lower to simmer and keep simmering for 35 minutes. Turn off the heat and leave in the pan for 5 mins.
  • Preheat the over to 350F degrees
  • Add all the remaining ingredients to the quinoa, add some salt and pepper.
  • Spoon the quinoa into the muffin tin and smooth the tops
  • Bake for 22 minutes and then turn off the oven (and without opening it) leave the muffins in for another 5 minutes.
  • Cool completely and then remove from the muffin tin

Ingredients:

  • 8 manicotti shells
  • 1/2 cup onions
  • 1 15-oz tomato sauce
  • 2 teaspoons garlic powder
  • 1 batch vegan ricotta
  • 1/2 cup spinach
  • 1 batch vegan parmesan cheese
  • 4 cloves garlic
  • 1 cup chopped mushrooms
  • salt
  • pepper

Instructions:

  1. Start by cooking the onions and garlic with a little oil for 3 minutes.
  2. Add the mushrooms and continue cooking for two more minutes.
  3. In the meantime, you can prepare the manicotti shells according to the instructions on the packaging.
  4. Add the spinach to the mushroom mix and remove the pan from the heat.
  5. Include one half of the vegan Parmesan and ricotta.
  6. Add pepper and salt to your taste.
  7. Set the oven to 415 F degrees and prepare a casserole dish.
  8. You can now start layering the vegan manicotti.
  9. Add tomato sauce on the bottom, then fill up the shells with the mushroom mix. Place them on top of the tomato sauce.
  10. Top it off with the rest of the tomato sauce, then add the other half of the Parmesan.
  11. Leave the casserole dish in the oven for half an hour.

The Instagram account @minimalistbaker has been a haven for vegans and gluten-free folks for many years. There are all sorts of recipes on the account and they are all with 10 ingredients or less. But, a couple of weeks ago, the head of the account announced that they were moving away from strictly vegan recipe and instead, incorporating animal products into the recipes quite soon. The account has 1.5 million followers, and once they heard about the change, people had things to say.

A lot of people seemed disappointed with the account’s choice to change the format of the recipe to incorporate ingredients that weren’t plant-based, but more than anything, people were confused. Everyone, later on, found out that head of the account was experiencing a lot of negative side effects from eating a plant-based diet, such as digestion problems, low B12, and iron, as well as hair loss.

After this announcement, some people became more understanding, as they really should. No one should have room to judge another person’s diet, and the most important thing is to always listen to your body. For now, almost all the recipes on the account are still plant based, but in the upcoming weeks it will change to have regular gluten-free recipes with animal product additions.
