In summer, everyone is always trying to figure out a way to keep themselves cool, but also energized. A way to combine both is to make your own cold brew coffee! Unlike regular coffee or even iced coffee, cold brew is not made with any hot water. Instead, cold water is used to extract the flavor and caffeine out of the coffee beans. This process is slow but so worthwhile.

Ingredients

For cold brew coffee, you will need water and ground coffee beans. You can choose whatever type of beans you like, but it’s best to grind them at home because you want the grounds slightly bigger than you would for normal coffee. This will come in handy later in the process.

Method

  1. Combine a gallon of water with 100 grams, or 3.5 oz of coffee grounds in a large container.
  2. Use a whisk to thoroughly mix the water and coffee.
  3. Cover it and leave it in the fridge for 24 hours.
  4. Use a cheesecloth and strain the mixture into a different container. If your grounds are small, do this step a few times.
  5. Put a mesh strainer with a paper towel on top and strain one more time.
  6. Enjoy for up to a week!

Yuzu kosho is a Japanese paste that is traditionally made from yuzu, a Japanese citrus fruit, and a chile that is similar to a Thai chili. Ingredients

  • 12 chilis like serrano, habanero, or anything along those lines
  • 4-6 Meyer lemons zested
  • Salt to taste

Instructions

  1. Start by deseeding your chilis. When you’re deseeding your chilis, make sure you’re also scrapping out as much pith as you can from the inside, because that will make the paste bitter.
  2. Weight how much chilis you used so you know the ratio of zest you’ll need, and then leave them to the side.
  3. However much chile you have, you want the ratio to be about 6 parts chili to 4 parts zest.
  4. Zest either Meyer lemons, a combination of lime, lemon, and grapefruit, or a combination of all of them.
  5. Toss the peppers into a food processor until they paste-like and then add in the zest as well as some salt to your taste.
  6. Put the mixture into a well-sealed jar or resealable container and leave it in your fridge for a week before you use it. This will help mellow the spiciness.

There’s nothing more impressive than putting homemade pasta on the dinner table, so impress your friends with this super simple gnocchi recipe!

Ingredients

  • 1 cup instant mashed potato flakes
  • 1 cup boiling hot water
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dry rubbed sage
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Recipe

  1. Combine the potato flakes and the hot water together in a large bowl and mix well so the flakes turn into mashed potatoes.
  2. Beat the egg and add it into the mix and stir to combine.
  3. Measure out the flour and add that into the bowl along with all the spices. Mix to combine into a dough, if it’s too dry to come together, add 1 teaspoon of water at a time until it just comes together.
  4. On a lightly floured surface, knead the dough for 3-5 minutes, then divide into 4 sections and roll each section into a log.
  5. Cut the logs up into 1-inch pieces and let the gnocchi rest for 15 minutes.
  6. Bring a large pot of water to a boil with a lot of salt, and when it’s boiled, drop in the gnocchi.
  7. Scoop them gently out of the water with a slotted spoon once they’ve risen to the top of the pot.
  8. Serve with your favorite sauce!

Froth Milk

Turn your coffee up a notch in the morning without stepping foot into a cafe by adding frothed milk on top of it. Pour as much milk as you would normally use for your coffee, but still less than half of the jar, into a mason jar and screw on the lids. Vigorously shake the jar for 30-60 seconds. Unscrew the lid, microwave for 30 seconds, and you have perfect foam every time!

The trick for perfectly set pastry cream is to leave it in the refrigerator for at least 2 hours and up to a whole day before you stuff your eclairs.

Pro Tip: If you don’t have a piping bag, use a gallon plastic bag with the corner snipped off!

Ingredients

  • 4 oz unsalted butter
  • 2 cups of flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup grated cheddar cheese
  • 3/4 cup any type of milk
  • parsley for garnish

Instructions

  1. Cut butter into cubes and put it into the freezer for a few minutes to get them really cold.
  2. Then, preheat the oven to 425 F and line a baking sheet with parchment paper.
  3. Throw in flour, baking powder, and salt into a food processor.
  4. Blitz those ingredients so they combine well and then add in the cold butter. Run the food processor until the butter is combined and it looks a little like sand.
  5. Add the grated cheddar cheese into the food processor.
  6. Drizzle in milk.
  7. Set the dough out onto a flour baking sheet and knead for about 5 minutes.
  8. Make the dough into a disk and take a 1/3 cup measures worth of dough and put it onto the sheet.
  9. Bake the biscuits in the oven for 20 minutes, and then finish by brushing on parsley butter and enjoy!

Method

  1. Boil and salt your water for the pasta

Nutella is everyone’s favorite to spread on toast, mix into desserts, and especially on crepes. But, it isn’t necessarily the healthiest thing to eat and it’s not vegan. Luckily, you can make it at home and it can be much more healthy than what you can buy in the store, all you need is a food processor and you can make the vegan Nutella of your dreams.

Ingredients

What gives Nutella it’s unique flavor is the addition of hazelnuts. The amp up the flavor, roast them yourself before you put them in with the rest of the ingredients.

Method

  1. After roasting the hazelnuts, put them in a paper towel and rub them so the skins come off. Try to get as much skin off as possible as it makes the nuts slightly bitter.
  2. Then, put the nuts in a high-speed blender or food processor until they come out like butter.
  3. Then, add all the other ingredients in at one time to the machine: vanilla extract, cocoa powder, maple syrup or agave, salt, and the non-dairy milk of your choice. You can also add just a bit of oil if you find the mixture not as smooth as you’d like.
  4. Enjoy!

  3. Measure out the flour and add that into the bowl along with all the spices. Mix to combine into a dough, if it’s too dry to come together, add 1 teaspoon of water at a time until it just comes together.
  4. On a lightly floured surface, knead the dough for 3-5 minutes, then divide into 4 sections and roll each section into a log.
  5. Cut the logs up into 1-inch pieces and let the gnocchi rest for 15 minutes.
  6. Bring a large pot of water to a boil with a lot of salt, and when it’s boiled, drop in the gnocchi.
  7. Scoop them gently out of the water with a slotted spoon once they’ve risen to the top of the pot.
  8. Serve with your favorite sauce!

Froth Milk

Turn your coffee up a notch in the morning without stepping foot into a cafe by adding frothed milk on top of it. Pour as much milk as you would normally use for your coffee, but still less than half of the jar, into a mason jar and screw on the lids. Vigorously shake the jar for 30-60 seconds. Unscrew the lid, microwave for 30 seconds, and you have perfect foam every time!

But, unlike popular belief, eclairs are actually really simple to make at home because they don’t need any special equipment, and each step is very easy to follow. Flavor

You can flavor the pastry cream that goes inside your eclair however you want, but when it comes to flavoring the actual dough, be careful. If you go with a chocolate shell, then you run the risk of not being able to tell when it’s done. Stick with a simple dough and customize later.

Pastry Cream

The trick for perfectly set pastry cream is to leave it in the refrigerator for at least 2 hours and up to a whole day before you stuff your eclairs.

Baking

To make sure you get evenly baked and evenly sized eclairs, draw each one on a piece of parchment paper, and then flip it over so you can see the outlines when you’re piping.

Pro Tip: If you don’t have a piping bag, use a gallon plastic bag with the corner snipped off!

No one can forget walking into a Red Lobster and seeing the big tank of lobsters at the front of the restaurant. While the menu can be questionable at times, everyone agrees that their cheddar biscuits are a slam dunk. If you love those cheesy, salty biscuits, you will die for this easy recipe.

Ingredients

  • 4 oz unsalted butter
  • 2 cups of flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup grated cheddar cheese
  • 3/4 cup any type of milk
  • parsley for garnish

Instructions

  1. Cut butter into cubes and put it into the freezer for a few minutes to get them really cold.
  2. Then, preheat the oven to 425 F and line a baking sheet with parchment paper.
  3. Throw in flour, baking powder, and salt into a food processor.
  4. Blitz those ingredients so they combine well and then add in the cold butter. Run the food processor until the butter is combined and it looks a little like sand.
  5. Add the grated cheddar cheese into the food processor.
  6. Drizzle in milk.
  7. Set the dough out onto a flour baking sheet and knead for about 5 minutes.
  8. Make the dough into a disk and take a 1/3 cup measures worth of dough and put it onto the sheet.
  9. Bake the biscuits in the oven for 20 minutes, and then finish by brushing on parsley butter and enjoy!

The star of this recipe is nutritional yeast. This is a type of yeast that is deactivated, which means it cannot be used as a rising agent. But, for some reason, it also tastes really cheesy! The best part is that there are a ton of B vitamins in it.

Method

  1. Boil and salt your water for the pasta
  2. Make a roux using olive oil, garlic, and flour.
  3. When the roux has come together, pour in whatever type of non-dairy milk you have on hand.

  5. Pour the liquid into a blender with nutritional yeast, garlic powder, salt, pepper, and paprika.

Nutella is everyone’s favorite to spread on toast, mix into desserts, and especially on crepes. But, it isn’t necessarily the healthiest thing to eat and it’s not vegan. Luckily, you can make it at home and it can be much more healthy than what you can buy in the store, all you need is a food processor and you can make the vegan Nutella of your dreams.

Ingredients

What gives Nutella it’s unique flavor is the addition of hazelnuts. The amp up the flavor, roast them yourself before you put them in with the rest of the ingredients.

Method

  1. After roasting the hazelnuts, put them in a paper towel and rub them so the skins come off. Try to get as much skin off as possible as it makes the nuts slightly bitter.
  2. Then, put the nuts in a high-speed blender or food processor until they come out like butter.
  3. Then, add all the other ingredients in at one time to the machine: vanilla extract, cocoa powder, maple syrup or agave, salt, and the non-dairy milk of your choice. You can also add just a bit of oil if you find the mixture not as smooth as you’d like.
  4. Enjoy!
