If you’re not a morning person, cooking breakfast is the last thing you want to do. If you want to eat breakfast, but can’t find the time, these egg muffins are filled with protein and nutrients, which will help you start your day off right and they’re portable! Here’s how to make them.

Ingredients:

  • 6 large eggs
  • 1 cup egg whites
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground pepper
  • 1 teaspoon coconut oil
  • 1/2 orange bell pepper, chopped
  • 1/2 cup yellow onion, chopped
  • 1 cup broccoli, chopped into small pieces
  • 1 cup mushrooms, sliced
  • 1/3 cup feta
  • 2 tablespoons fresh parsley

Instructions:

  1. Preheat the oven to 375 F. Spray a twelve-cup muffin tin with cooking spray or line the tin with silicone baking cups.
  2. In a large bowl, mix the eggs and egg whites. Add salt and pepper to your liking.
  3. In the meantime, heat a skillet over medium heat with 1 teaspoon oil. Add in the chopped veggies and let them cook for 5-6 minutes, or until they’re soft and the onions are fragrant.
  4. In the bowl with the egg mixture, add the sauteed veggies, feta, and parsley. Mix well.
  5. Pour the egg mixture into the muffin cups.
  6. Bake the eggs for 17-20 minutes or until they’re no longer jiggly and you a toothpick comes out clean when inserted into them.
  7. Let the eggs cool before eating them and enjoy.

This Italian Egg Bake, published by Cotter Crunch, is a fabulous low carb dish that can be used for a healthy brunch, breakfast or when you fancy eggs for dinner. It is cooked in a tomato sauce, filled with cheese and fresh vegetables and finished with Italian seasoning. What more could you want from this egg dish?! It’s easy to make and perfect for meal prep and it is gluten and grain-free.

Ingredients

  • 4 ounces diced pancetta
  • 1/2 cup chopped red onion 
  • 1/2 cup chopped fresh oregano
  • 1/2 cup chopped fresh basil
  • 1/4 cup unsweetened almond milk
  • 2/3 cup shredded Parmesan cheese (extra for topping)
  • 1/2 tsp minced garlic
  • 1/4 tsp Sea salt and pepper each (or to taste)
  • 1/2 cup chopped fresh tomato
  • 1 cup tomato sauce
  • 5 large cage-free eggs
  • Red pepper flakes to garnish
  • Oregano to garnish

Instructions

  • Preheat oven to 425 degrees F.
  • Pan-fry the pancetta and onion together in a cast-iron skillet for 2 minutes and remove from the heat.
  • Whisk together the almond milk and parmesan cheese and stir in the garlic, tomato, salt and pepper, tomato sauce and herbs.
  • Pour the mixture over the onion and pancetta in the skillet.
  • With a spatula, create 5 small holes in the mixture where you can place the eggs. Crack the eggs on top of each hole.
  • Add any extra cheese you desire and put the skillet in the oven for 15-18 minutes, the egg whites should be set and the corners are brown.
  • Garnish with Italian parsley and red pepper flakes and eat!

An omelet plus rice equals the Japanese version of omelets with rice. Omurice is a Japanese spin-off of thinly fried eggs on a bed of rice usually topped with ketchup.

Ketchup you say? You heard that right. You probably have a bottle of Heinz in your fridge right now. So what are you waiting for? That omurice isn’t going to cook itself! Try out this awesome recipe for a fluffy Asian egg-based meal.

Ingredients

  • 1 white onion
  • 1 boneless skinless chicken thighs or vegan chicken
  • sesame oil
  • chopped carrots and green beans
  • pink salt
  • freshly ground black pepper
  • Japanese whole wheat rice
  • ketchup
  • soy sauce
  • soy milk

Instructions

  1. Cut the white onion into small strips.
  2. Cut the chicken or vegan chicken into strips.
  3. Heat up the frying pan with a little bit of oil.
  4. Add the onions and cook for 5 minutes.
  5. Add the chicken strips afterward. Cook for 5 minutes.
  6. Add the mixed vegetables and mix every once in a while.
  7. Add the cooked rice and flavors and sauces.
  8. Mix it all together.

In a separate frying pan

  1. Add oil to the frying pan.
  2. In a bowl mix in eggs and a little bit of milk.
  3. Make sure one side is cooked pretty well.
  4. Add the mixed veggies, chicken and rice on top of the omelet.
  5. Fold one end of the omelet to the opposite end making sure to create an encasing to cover its condiments.
  6. Transfer it to a large plate.
  7. Top it with a few lines of ketchup.

Eggs are one of the best ingredients you can have in your fridge. You can make them in many different ways and add them to your favorite meals. Almost everyone loves boiled eggs with their breakfast or lunch, but peeling them can be so frustrating sometimes.

An omelet plus rice equals the Japanese version of omelets with rice. Omurice is a Japanese spin-off of thinly fried eggs on a bed of rice usually topped with ketchup.

Ketchup you say? You heard that right. You probably have a bottle of Heinz in your fridge right now. So what are you waiting for? That omurice isn’t going to cook itself! Try out this awesome recipe for a fluffy Asian egg-based meal.

Ingredients

  • 1 white onion
  • 1 boneless skinless chicken thighs or vegan chicken
  • sesame oil
  • chopped carrots and green beans
  • pink salt
  • freshly ground black pepper
  • Japanese whole wheat rice
  • ketchup
  • soy sauce
  • soy milk

Instructions

  1. Cut the white onion into small strips.
  2. Cut the chicken or vegan chicken into strips.
  3. Heat up the frying pan with a little bit of oil.
  4. Add the onions and cook for 5 minutes.
  5. Add the chicken strips afterward. Cook for 5 minutes.
  6. Add the mixed vegetables and mix every once in a while.
  7. Add the cooked rice and flavors and sauces.
  8. Mix it all together.

In a separate frying pan

  1. Add oil to the frying pan.
  2. In a bowl mix in eggs and a little bit of milk.
  3. Make sure one side is cooked pretty well.
  4. Add the mixed veggies, chicken and rice on top of the omelet.
  5. Fold one end of the omelet to the opposite end making sure to create an encasing to cover its condiments.
  6. Transfer it to a large plate.
  7. Top it with a few lines of ketchup.
