Raspberry oatmeal πŸ’žπŸ’žπŸ’ž I'm feeling fruity πŸ˜„ There's no sun today but this naturally sweetened warm berry oatmeal with almond butter, warm cherries, raspberries and chocolate chips made my morning so much better πŸ™ And it's Friday! πŸ˜„πŸ’ž Btw with this recipe I wanted to show you that you don't have to use superfoods powders to create pink bowls! I mean I love my superfoods powders, but if you don't have them, it's not a problem, just use frozen raspberries 😊😊😊 . Raspberry oatmeal 1/2 cup porridge oats 1 tbsp chia seeds 1/2 cup frozen raspberries 4-5 small dates, chopped (use 2-3 if using big medjool dates) 3/4 cup hot water 1/2 cup unsweetened oat or almond milk Start by placing oats, chia seeds, raspberries and chopped dates in a pan. Stir through. Puor hot water over the mixture and set aside for 10 minutes. After that time add plant milk and bring to a simmer, stirring frequently. Let simmer until thick and creamy. Sunday snacking πŸ˜‹πŸ˜‹πŸ˜‹ My favourite crunchy cups, super easy to make, healthy, wholesome, gluten free friendly and always ready to be served with your favourite filling πŸ˜‰ I felt like peanut butter, almond butter and chocolate chips today, but coconut yoghurt and chia jam is also a delicious option πŸ˜‹πŸ˜‹ I'll leave the crust recipe below! . Crunchy cups 1 cup rolled oats (gluten free if needed) 1/2 cup almonds 1/2 cup shredded coconut 2 tbsp coconut oil 3 tbsp maple syrup 1/2 tsp vanilla extract generous pinch of pink salt 1-2 tbsp cold water Place oats and almonds in a food processor, blitz into rough flour. Add coconut and pulse blend to combine. Add coconut oil, maple syrup, salt and vanilla and blend to combine all the ingredients. While blending, slowly start adding cold water, tablespoon by tablespoon, until a ball of sticky dough is formed. Divide dough in 6-8 even size balls. Press each ball into muffin mold, leaving edges high. Bake for about 10 minutes in 180C or until golden brown (be careful not to burn the edges). Vegan panna cotta cake 🍰 I promised you to post my panna cotta recipe. I was testing it yesterday and the idea of making panna cotta cake came to my mind… I couldn't resist! It's already almost gone now, it's such a perfect, light and delicious weekend dessert 🍰🎈 I combined pistacchio, strawberry and vanilla flavours in this cake, which tastes really amazing! I'll leave you the recipe below in case you wanna try it! . Vanilla strawberry panna cotta cake For the base 1/2 cup pistacchios, roasted and salted 1 cup almonds 2 tbsp maple syrup For the vanilla layer 1 can full fat coconut milk 1/2 cup unsweetened oat milk 1 tsp agar agar 2 tbsp maple syrup 1 tbsp lemon juice 1 tsp vanilla For the strawberry layer 1/2 cup oat milk 150g strawberries 1 tsp agar agar 2 tbsp maple syrup Place pistacchios and almonds in a food processor and proces until consistency of sand. Add maple syrup and process until it becomes sticky. Transfer the crust into a baking mold (18-21cm), lined with parchment paper, and press firmly with a spoon or bottom of a glass. Place in the freezer. In a small pan combine half cup of oat milk with 1 tsp agar agar and bring the mixture to a simmer. Let simmer for 30 seconds, then remove from the heat. In a bigger pan heat up coconut milk (don't boil). When warm, add maple syrup, lemon juice and vanilla. Slowly add agar agar mixture and stir it in. Let cool to room temperature, then pour on the cold crust and place in the fridge. Repeat the process with agar agar and oat milk. Blend the strawberries into puree and combine it with maple syrup and agar agar mixture.
