Love Trail Mix? You Can Turn it Into Delicious Cookies!

Trail mix is one of those snacks that solves both our sweet and salty cravings. You can really get creative with what you put in it and no two batches end up being exactly the same. The nuts, chocolate, oats, seeds, and dried fruit make it an energizing, satisfying snack and now you can turn your trail mix into cookies.

Ingredients:

  • 1 1/2 cups assorted raw nuts and seeds
  • 1/2 cup old-fashioned oats
  • 1 large egg
  • 4 tbsp unsalted butter, melted
  • 1/4 cup dark brown sugar
  • 1 1/2 tsp. vanilla extract
  • 1 tsp kosher salt
  • 1/2 tsp baking soda
  • 3/4 cup assorted dried fruit
  • 3/4 cup chopped bittersweet chocolate bars or chips
  • 1/2 cup all-purpose flour
  • flaky sea salt

Instructions:

  1. Preheat oven to 350 F and place racks in the upper and lower thirds of the oven.
  2. Toast the seed, nuts, and oats, on a rimmed baking sheet, making sure to toss them once. Bake them for about 10-12 minutes, or until they’re golden brown. Put them aside in a medium bowl to cool.
  3. In a large bowl, mix egg, butter, brown sugar, granulated sugar, vanilla, salt, and baking soda.
  4. Toss in the dried fruit and chocolate and combine.
  5. Stir the egg mixture and then put it in the flour.
  6. Combine the nut mixture with the egg and flour mixture and mix until everything is distributed evenly throughout the dough.
  7. Cover and chill for at least 2 hours and up to 3 days.
  8. Reheat oven to 350 F.
  9. Scoop 1/3 cup portion of dough to make 12 cookies and press the cookies onto the sheet. Top with sea salt.
  10. Bake the cookies and rotate the sheets top to bottom and front to back once, for 11-13 minutes, or until they’re golden brown. Let them cool on baking sheets.
