Ingredients
To prepare the best tamale pie you should get:
1 large egg
1 box corn muffin mix
1 chopped onion
1/2 c. sour cream
kosher salt
1 tablespoon extra-virgin olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 c. canned creamed corn
freshly ground black pepper
1/3 c. red enchilada sauce
2 cloves minced garlic
1 lb. ground beef
1 c. shredded Monterey jack cheese
1 c. shredded cheddar cheese
Instructions
Set the oven on 400 F degrees.
Grab a bowl and mix the egg, sour cream, muffin mix, and creamed corn together.
In the meantime, prepare a skillet with spray so that you can cook the pie in the oven. Pour the mixture in the skillet and leave it in the oven for 20 minutes.
Cook the onions, chili powder, cumin, salt and pepper in a skillet with oil for five minutes. Include the garlic and cook for an extra minute. You should add the meat while also stirring often for 6 minutes. Remove the liquid.
