Eggs are a versatile and low-cost ingredient that makes breakfast a snap. However, there are so many opportunities to make them the star of the main course. These recipes combine fresh produce, herbs, and of course eggs, that will wow your taste buds and your wallet.

Shakshuka

This North African dish has been assimilated into Israeli cuisine and is now essential in the Israeli kitchen. Eggs are poached in a sweet pepper and tomato sauce and can be seasoned to your liking.  Drizzle over with tahini and garnish with parsley or dill and you have a stunning main course.

Kuku Sabzi

Kuku sabzi is an egg dish eaten on the Persian new year. Essentially it is just a frittata with a few cups of chopped herbs such as cilantro, parsley, and dill. In addition to the herbs, you can add leeks and onions for flavor and texture. This dish is supposed to resemble the spring, and with all the freshness of the herbs, it does just that.

Huevos Rancheros

Eggs are key in this Latin-inspired dish.  All you need to do is fry up some beans, plate with salsa, whatever fixings you like, tortillas and fried eggs. In no time you have a filling and colorful dish.
