Try These Delicious Chocolate Chip and Blueberry Banana Bread Muffins

Muffins are our all-time favorite dessert and lucky for us, there are so many great recipes for this delicious treat. We found this recipe for muffins made with blueberries, bananas, and chocolate chips and it sounds amazing!

Shelly Westerhausen who shares great recipes on her blog Vegetarian Ventures, made these muffins and she described them as “chewy and moist and sweet.” She uses yogurt instead of oil and sweetens them with maple syrup, which sounds much healthier than our regular muffins.

Ingredients:

  • 1 1/2 cups spelt (or whole wheat) flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 4 ripened medium bananas mashed
  • 3/4 cup greek yogurt or sour cream
  • 1/4 cup maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup frozen blueberries
  • 1/2 cup chocolate chips
  • Sea salt for topping at the end (optional)

Instructions:

  1. Preheat oven to 375 degrees and line muffin tin with 12 liners.
  2. In a large mixing bowl, whisk together flour, baking powder, cinnamon, and salt.
  3. Make a well in the center of the dry ingredients and add in mashed bananas, Greek yogurt or sour cream, maple syrup, eggs, and vanilla extract. Whisk together the wet ingredients in the center until completely combined.
  4. Switching to a spatula, fold the dry ingredients into the wet ingredients just until incorporated. Fold in chocolate chips and blueberries.
  5. Divide the dough between the 12 muffin liners and bake for 23 – 25 minutes or until golden brown on top and a toothpick comes out of the center of a middle muffin clean.
  6. Sprinkle with a little bit of chunky salt (optional) and serve warm or at room temperature.
