These Lemon Squares Will Be a Hit at Your Next Family Gathering!

Nothing tastes as much like summer as lemons do. These lemon squares have been passed down from our family for generations and they’re always the first dessert gone at any get-together. The citrus flavor makes them a crowd favorite!

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1/4 cup confectioners’ sugar

Filling:

  • 2 large eggs
  • 1 cup sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 2 tablespoons lemon juice
  • 1 teaspoon grated lemon zest
  • additional confectioners’ sugar

Instructions:

  1. In a bowl combine the flour, butter, and confectioners’ sugar. Pat it into an ungreased 8-inch square baking pan. Bake at 350F for 20 minutes.
  2. For the filling, beat eggs in a small bowl. Add the sugar, flour, baking powder, lemon juice, and zest and beat until it’s frothy.
  3. Pour it over the crust and bake it for 25 minutes, until it’s light golden brown.
  4. Cool on a wire rack and dust it with confectioners’ sugar. Cut it into bars.
