The past year has seen most of us spending more time indoors, and more specifically—in the kitchen. But cooking can be a daunting task, and some recipes out there are quite labor-intensive. Luckily for us, there are those who offer a helping hand when it comes to working our way through the kitchen.

Recipe developer, food stylist, and cookbook author Dana Shultz is one of those guardian angels. The mastermind behind the successful food blog-turned viral Instagram page, Minimalist Baker, her goal is to make cooking a lot more easier and approachable.

“All eaters are welcome,” reads her website’s caption, as she invites the most novices of cooks to take a (tiny) leap of faith. The idea is simple: Shultz shares recipes that require 10 ingredients or less, 1 bowl, or 30 minutes or less to prepare. The meals vary (from savory to sweet) and most are plant-based. Shultz also shies away from fancy/expensive ingredients.

“Minimalist Baker was born out of a desire to make simple cooking available to the everyday cook—like me,” explained the recipe developer in an interview with Portland Monthly. “I would go and look at recipes on blogs and was generally evaluating whether or not I’d make the recipes based on how much time, equipment, and number of ingredients they required. I wanted simple, and it wasn’t there.”

Shultz’s intuition—that there’s a market for simple recipes—proved correct, and these days her fanbase on Instagram alone is staggering (some 2 million followers to date, and counting!).

“Our plans include continuing to perfect and improve what we already do on Minimalist Baker, which is to provide simple, plant-based recipes that are mind-blowingly delicious,” says Shultz. “If we can keep doing that, I think there will always be a place for us in the internet world and beyond.”

American cookbook author, blogger, and host of the Food Network cooking show Girl Meets Farm, Molly Yeh is known for her unique recipes that lean on her cultural upbringing.

Born to Chinese and Jewish parents, her recipes often fuse the two kitchens together creating a new kind of kitchen that has gained popularity. One of these was her recipe for pretzel challah, which went viral after she posted it on her blog in 2013. It was this recipe that had launched her career.

Now with more than 600k followers on Instagram, people have clearly caught onto the trend. “I used to think that the best part about being Jewish and Chinese was that I could breeze through math class like it ain’t no thang,” joked Yeh in an interview with food52, “but now I’m pretty sure that the best part is getting away with taking the best foods from each culture, and smashing them together.”

Not one to shy from new things, Yeh says she also loves traveling and learning what other people eat for their holidays or pizza nights or midnight snacks, and then recreating such food in her own way. Another favorite food of hers is schnitzel, adhering to the motto “If life gives you lemons, squeeze them on a schnitzel!”. Her love for the food goes so deep that her family even dressed up as schnitzel for Halloween.

Danling Xiao, a graphic designer from Sydney, Australia, was playing with her food one day while making dinner. Suddenly, she came up with a genius idea – to turn it into art as a way to raise awareness for causes such as animal protection, ethical farming, and organic eating.

Since launching her project in 2015, she has gained over 38,000 followers on Instagram that look forward to her incredibly creative, quirky and tasty artworks. Xiao set herself a goal to create a food-inspired piece of artwork every single day and has stuck to that so far. She also gives lectures and workshops in her community that promote zero-waste, limiting plastic use and healthy eating.

The crunching of the peanuts, the mix of sour and salty that comes with the wave of spices – this is pad thai. You can take out this popular fried noodle dish in almost every street food shop and restaurant in Thailand.

This version of pad thai is catered towards vegetarians and people opting for a meat-free alternative. Traditional pad thai is made with seafood – but we’ve found that this recipe is equally as satisfying.

Ingredients

  • 100g rice noodles (soaked for 15 minutes before)
  • 50g white onion
  • 200g firm tofu
  • 20g chives
  • 3 tbsp oil
  • 20g tamarind paste
  • 5 – 8 tbsp soy sauce
  • 50g bean sprouts
  • roasted peanuts
  • organic peanut butter (optional)
  • garlic clove
  • lime wedge

Instructions

  1. Soak rice noodles for 30 minutes.
  2. Fry garlic, onion and bean sprouts.
  3. Cook tofu and add spices.
  4. Add a spoonful of peanut butter (if you want it to be more peanut-y).
  5. Place rice noodles into pan and fry everything together.
  6. Add a little water.
  7. Garnish with peanuts and lime wedges.

Hummus is one of the most incredible dishes to come out of Middle Eastern cuisine. If you are a vegan, sometimes traveling can be limiting. If you’re going somewhere that has a big culture of eating meat or dairy products it can be difficult to find types of food that are available for you. But, just because you’re diet is different, doesn’t mean that you shouldn’t stop exploring the world! Here are some simple tips about how to travel as a vegan.

Language

If you’re going somewhere where English is not the native language or if many people don’t speak English, learn some words to ask people at restaurants. Some good things to know are of course vegan, meat, and cheese. You can also use hand gestures when asking to get an idea of the dishes are vegan or not.

Research

Before you go somewhere, look up and see if there are any vegan or vegetarian restaurants. You can also see if there are any specific cuisine restaurants that can be vegan, like Middle Eastern or Asian.

Grocery Stores

In America, as well as most of the world is used to the Neapolitan style of pizza. But, in Rome, most of what you will find is Sicilian style pizza, which is a rectangle rather than a square. The flavors of the pizza always vary widely compared to most Neapolitan style pizzas. What’s even better about pizza in Rome is that almost every place offers many options for pizza with no cheese, so dairy-free people can still enjoy without fear!  So if you are preparing for a trip to Rome, don’t forget to keep your eyes out for this different pizzas. 

Bianca

This is probably the strangest looking pizza because it looks nothing like the pizzas most people are used to. Pizza Bianca is a completely vegan pizza that tastes more like focaccia, except it is super flavorful and very airy. Normally you will find it topped with olive oil, salt, and sometimes herbs like rosemary.

Zucchine

This zucchini pizza is an interesting vegetarian option because of the texture the zucchini brings. It is also usually accompanied by ricotta cheese.

American cookbook author, blogger, and host of the Food Network cooking show Girl Meets Farm, Molly Yeh is known for her unique recipes that lean on her cultural upbringing.

Born to Chinese and Jewish parents, her recipes often fuse the two kitchens together creating a new kind of kitchen that has gained popularity. One of these was her recipe for pretzel challah, which went viral after she posted it on her blog in 2013. It was this recipe that had launched her career.

Now with more than 600k followers on Instagram, people have clearly caught onto the trend. “I used to think that the best part about being Jewish and Chinese was that I could breeze through math class like it ain’t no thang,” joked Yeh in an interview with food52, “but now I’m pretty sure that the best part is getting away with taking the best foods from each culture, and smashing them together.”

Not one to shy from new things, Yeh says she also loves traveling and learning what other people eat for their holidays or pizza nights or midnight snacks, and then recreating such food in her own way. Another favorite food of hers is schnitzel, adhering to the motto “If life gives you lemons, squeeze them on a schnitzel!”. Her love for the food goes so deep that her family even dressed up as schnitzel for Halloween.

Danling Xiao, a graphic designer from Sydney, Australia, was playing with her food one day while making dinner. Suddenly, she came up with a genius idea – to turn it into art as a way to raise awareness for causes such as animal protection, ethical farming, and organic eating.

Since launching her project in 2015, she has gained over 38,000 followers on Instagram that look forward to her incredibly creative, quirky and tasty artworks. Xiao set herself a goal to create a food-inspired piece of artwork every single day and has stuck to that so far. She also gives lectures and workshops in her community that promote zero-waste, limiting plastic use and healthy eating.

The crunching of the peanuts, the mix of sour and salty that comes with the wave of spices – this is pad thai. You can take out this popular fried noodle dish in almost every street food shop and restaurant in Thailand.

This version of pad thai is catered towards vegetarians and people opting for a meat-free alternative. Traditional pad thai is made with seafood – but we’ve found that this recipe is equally as satisfying.

Ingredients

  • 100g rice noodles (soaked for 15 minutes before)
  • 50g white onion
  • 200g firm tofu
  • 20g chives
  • 3 tbsp oil
  • 20g tamarind paste
  • 5 – 8 tbsp soy sauce
  • 50g bean sprouts
  • roasted peanuts
  • organic peanut butter (optional)
  • garlic clove
  • lime wedge

Instructions

  1. Soak rice noodles for 30 minutes.
  2. Fry garlic, onion and bean sprouts.
  3. Cook tofu and add spices.
  4. Add a spoonful of peanut butter (if you want it to be more peanut-y).
  5. Place rice noodles into pan and fry everything together.
  6. Add a little water.
  7. Garnish with peanuts and lime wedges.

Naranjilla Juice

Although there has been a small craze in the last few years about putting butter in coffee, people living in the region of the Himalayas have been putting butter in their tea for hundreds of years. Yaks have been commonly available, making them the perfect way to make fermented tea creamier.

Agua Dolce

Another drink reigning from the Central American country of Costa Rica, this drink literally means sweet water. People make it by scraping sugar cane into a cup of boiling water or milk to start their day.

Hummus is one of the most incredible dishes to come out of Middle Eastern cuisine. Located in Jaffa, the southern part of the Tel Aviv-Jaffa municipality is Abu Hassan. This restaurant prioritizes incredible flavor above all, but in an unbelievable fast paced environment. Served hot with pita, a spicy acidic sauce and onions for dipping, this place is not only a destination but also an experience.

Mashawsha

This unassuming restaurant is actually a haven for amazing hummus. The plates for one are absolutely big enough for two, and this restaurant also provides mashausha, a type of a hummus that is made slightly different from regular Israeli hummus but is just as delicious and healthful.

Language

If you’re going somewhere where English is not the native language or if many people don’t speak English, learn some words to ask people at restaurants. Some good things to know are of course vegan, meat, and cheese. You can also use hand gestures when asking to get an idea of the dishes are vegan or not.

Research

Before you go somewhere, look up and see if there are any vegan or vegetarian restaurants. You can also see if there are any specific cuisine restaurants that can be vegan, like Middle Eastern or Asian.

Grocery Stores

In America, as well as most of the world is used to the Neapolitan style of pizza. But, in Rome, most of what you will find is Sicilian style pizza, which is a rectangle rather than a square. The flavors of the pizza always vary widely compared to most Neapolitan style pizzas. What’s even better about pizza in Rome is that almost every place offers many options for pizza with no cheese, so dairy-free people can still enjoy without fear!  So if you are preparing for a trip to Rome, don’t forget to keep your eyes out for this different pizzas. 

Bianca

This is probably the strangest looking pizza because it looks nothing like the pizzas most people are used to. Pizza Bianca is a completely vegan pizza that tastes more like focaccia, except it is super flavorful and very airy. Normally you will find it topped with olive oil, salt, and sometimes herbs like rosemary.

Zucchine

This zucchini pizza is an interesting vegetarian option because of the texture the zucchini brings. It is also usually accompanied by ricotta cheese.
