Sweet Potatoes
Sweet potatoes are loaded with vitamin A and potassium and are much lower in carbs than their friends russet or Idaho. Not only that, but they can come in multiple colors, which makes them a great choice to put on your plate for dinner. They can take a while to cook, but if you dice them small they can cook in just 15 minutes or less! Sprinkle on chili or cinnamon for extra excitement.
