Cooking often leads to a lot of waste. Here are some creative ideas to save some ingredients you might have otherwise thrown away.

Chickpea Can Liquid

If you are looking for a vegan alternative for meringues, look no further! Aquafaba, the liquid inside a can of chickpeas, is somehow egg whites long lost cousin. Simply whip the liquid as you would egg whites, add sugar, and bake! These meringues will take a bit longer to form stiff peaks and longer in the over, but the satisfaction from your vegan and egg-free friends will be worth the extra time.

Pasta Water

If you pouring out all your pasta water, you are truly letting gold go down the drain. The water the pasta has been cooked in is salty, starchy, and makes any sauce more delicious. Whether you’re making sauce from scratch or using one from a jar, keep some of the pasta water to make it cohesive and bump up the flavor.

Wilting Vegetables

Few things are sadder than limp greens. But, before you banish them to the trash can, consider freezing them and making them into a stock. Simply put them in a freezer bag along with your other vegetable scraps, onion skins, etc., boil them until the water absorbs their flavor, and you have homemade stock!
