Do you love peaches? Peaches are an extremely versatile fruit that goes so well in savory and sweet dishes, and they’re amazing in cocktails. Bellinis, a sparkling Italian cocktail use only two ingredients, Prosecco and peach puree. If you’re looking for a way to use overripe peaches, look no further than this tasty bellini.
Ingredients:
- 4 medium ripe peaches, plus peaches for garnish
- 1 bottle Prosecco, chilled
Instructions:
- To make the peach puree, peel your peaches, slice them in half, and remove the pits. Put the halved peaches in a blender or food processor and blend until the puree is smooth. Place it in the refrigerator until cool, for at least 30 minutes.
- Pour 2 ounces (1/4 cup) chilled peach puree into a Champagne flute and add in chilled Prosecco. Make sure not to overflow the glass and stir with a spoon.
- Top the drink with a splash of Prosecco and add a peach slice to garnish.
