Bellinis are the Cocktail of Summer

Do you love peaches? Peaches are an extremely versatile fruit that goes so well in savory and sweet dishes, and they’re amazing in cocktails. Bellinis, a sparkling Italian cocktail use only two ingredients, Prosecco and peach puree. If you’re looking for a way to use overripe peaches, look no further than this tasty bellini.

Ingredients:

  • 4 medium ripe peaches, plus peaches for garnish
  • 1 bottle Prosecco, chilled

Instructions:

  1. To make the peach puree, peel your peaches, slice them in half, and remove the pits. Put the halved peaches in a blender or food processor and blend until the puree is smooth. Place it in the refrigerator until cool, for at least 30 minutes.
  2. Pour 2 ounces (1/4 cup) chilled peach puree into a Champagne flute and add in chilled Prosecco. Make sure not to overflow the glass and stir with a spoon.
  3. Top the drink with a splash of Prosecco and add a peach slice to garnish.
