 Start with fresh, firm beets

First things first. In order to get the most of the beets flavor, you’ll need some fresh beets that are firm and feel heavy to their size. If the beets came with their greens still attached, cut off the greens and reserve them for another use.

Prepare & roast the beets

Maybe you can firstly drizzle the beets with a bit of oil before roasting if you like. A bit of oil, especially olive oil, can help keep them from drying out in the hot oven.

You should then sprinkle the beets with salt and in order to evenly roast the beets fold the foil over them and crimp to seal the sides closed. Roast the beets until tender.

Let the beets cool

Remove the beets from the oven when they’re tender. Open up the foil packet and let them sit until they’re cool enough to handle.

Peel roasted beets

When the beets are cool enough to handle, you should slip their peels off. Use a paring knife if you like.
