]]>The ingredients in plant-based meat differ across brands, but basically the texture and taste of ground beef are replicated by using plant proteins made of soy, peas, beans, rice, and wheat. To achieve the pink color of beef, pomegranate juice, fruit powder, and other fruits and vegetables are used.
The amount of protein in plant-based meat and 80% lean ground beef doesn’t differ—they both contain around 20 grams of protein per 4-ounce patty. Plant-based meat does have fewer calories and fat and it has no cholesterol. But, it has more sodium than real beef—370 to 580 mg compared to 80 mg in unseasoned meat.
In supermarkets, plant-based meats are usually found next in the refrigerator meat case next to real beef. They also don’t differ significantly in price to real beef.
With the popularity of plant-based meat alternatives, many restaurants and fast-food chains have plant-based options on their menu. But, if you’re vegetarian or vegan, make sure before you order the burger to ask how it is prepared to avoid cross-contamination.
If you know how to cook ground beef, you know how to prepare plant-based meats as they are cooked the same. Just refer to the packaging for specific tips and cooking temperatures. Be aware that not all plant-based meats will turn dark brown like real meat does.

]]>These are the ingredients for the vegetarian pho: 5 cups water, 1 cinnamon stick, 1/2 teaspoon whole cloves, 2 garlic cloves, 3 tablespoons tamari, 2 star anise, 1/2 small yellow onion cut into small pieces, 4 oz shiitake mushrooms with removed stems, 2 finely chopped scallions, 1 tablespoon rice vinegar, 1 tablespoon peppercorns, 2 baby bok choy chopped into quarters, 4 oz rice noodles, 1 2-inch piece of ginger cut in half, 1/2 cup edamame.
Add the cinnamon stick, star anise, clover, and peppercorns in a pot and cook them for 30 seconds on low heat. Include the garlic, ginger, water, onion and the stems of the shiitake mushrooms. Let the pho simmer for 20 minutes.
Now you should strain it and add the liquid to the pot again. Add the pieces of the mushroom caps to the rest of the ingredients together with the scallions, tamari, and rice vinegar. Let it simmer for 15. Combine the bok choy and simmer for 8 minutes. Add the seasoning to your choice.
Cook the noodles, then add them to two bowls. Cover them with the vegetarian pho.

]]>Even if you don’t eat meat one day out of the week, you will save as much CO2 from polluting the air as 16 cars being taken off the road.
Here are some ways that eating meat worsens our planet.
Keeping animals alive, especially bigger ones like cows takes a lot of water. Some estimates have said that a kilo of beef requires anywhere from 13,000 liters up to 100,000. Compare that to wheat which only requires 1,000-2,000 liters of water to produce a kilo of product, and you see how much water can be saved.
Also, manure from the livestock often gets leaked into water sources, deeming the water undrinkable for people living near these farms.
All animals, especially cows and pigs, produce methane when they fart, which sounds funny, but is a serious deal.
Not only that, but methane gets released from their manure, as well as from the oil that transports them to market, keeps the meat cold, etc. Methane is the most dangerous greenhouse gas and by mass producing livestock, more and more is destroying the ozone.

]]>Gravy is essentially a sauce made out of the drippings and liquids that come off an animal. That means that is has a lot of fat and cholesterol that isn’t really necessary. Instead, go for a vegetarian gravy made out of mushrooms. You can also make it vegan by switching out butter for olive oil or vegan butter.

The green beans in the casserole are of course healthy but combined with cream or creamy canned soup and you’ve basically ruined all the healthy parts. Instead, make regular sauteed greens beans and serve them with slivered almonds.

Again, sweet potatoes are very healthy, but by sticking a marshmallow on top, you take away from the nutrients. If you still want something of a treat, make sweet potato fries! Even with the oil needed, it is still healthier than a sugary marshmallow.

But, eventually, Passard decided to change the menu entirely and let go of his three Michelin stars to start L’Arpège as something completely produce focused. Now his restaurant has gained back all three stars for their purely vegetarian menu.
Although this restaurant is in Singapore, the chef de cuisine Kirk Westaway derives the menu from his British roots and prepares modern British fair. The menu is completely vegetarian and has earned the restaurant a Michelin star. The menu is changed every few months to accommodate the local produce that is available.
