There’s nothing quite like some fresh out of the oven banana bread. It’s super versatile and it can be eaten with almost any meal, breakfast, lunch, or dinner. If you’re ever looking for something to do with those bananas that are almost too brown to eat, you should make banana bread. This is literally the best banana bread we’ve ever had; it’s super moist, chocolaty, and it happens to be a crowd favorite!

Try doubling the recipe, you can always freeze the leftovers (if there are any). We love making this recipe into muffins, which makes the perfect snack.

Ingredients:

  • 3 very ripe bananas
  • 1/3 cup melted butter, unsalted or salted
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1/2 to 3/4 cup sugar (it depends how sweet you like it, but we always use 1/2)
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups of all-purpose flour
  • 1/2 12 oz bag chocolate chips
  • nuts of your choice

Instructions:

  1. Preheat the oven to 350F (175C).
  2. Butter a 4×8 inch loaf pan or skip this step if you’re making muffins.
  3. Mash the bananas in a mixing bowl with a fork until they are smooth and stir in the melted butter.
  4. Mix in the baking soda and salt. Stir the sugar, egg, and vanilla extract. Mix in the flour.
  5. Add the chocolate chips and stir. If you want to add nuts add them in.
  6. Pour the batter into the pan or muffin tins and bake it for 50 min to an hour. The banana bread is done when you can stick a toothpick through the center and it comes out clean.
  7. Remove it from the oven and let it cool for a few minutes.
  8. Enjoy!

Olive oil cake is a delightful dessert that uses a normally savory ingredient as the star; olive oil! Make this moist, delicious cake, and you’ll never regret it.

Ingredients:

  • 3 large room-temperature eggs
  • 3/4  cup of white sugar
  • 112 grams of extra-virgin olive oil+extra for greasing
  • 120 grams of whole milk
  • 1/2  teaspoon of vanilla extract
  • 1/4  teaspoon of almond extract
  • 1 1/2 cups of all-purpose flour+extra for the tin
  • 1 1/2 teaspoons of baking powder
  • 1/2  teaspoon kosher salt

Instructions:

  1. Start by cracking the eggs into the bowl of a stand mixer and add in the sugar. Put on the whisk attachment and beat for 30 seconds on high.
  2. Then, reduce the speed to slow, and slowly add in the olive oil, followed by the milk, and then the vanilla and almond extracts.
  3. In another bowl, whisk together the flour, baking powder, and salt.
  4. Spoon in the dry mixture with the stand mixer on low until the batter is just combined.
  5. Grease a round 8-inch cake tin with olive oil and then dust with flour, pour in the batter and cook at 350 F for 30-35 minutes.
  6. To cool, first keep the cake in the tin for 5 minutes, then take it out and put on a cooling rack until completely cool.
  7. Enjoy!

Ingredients

For those of you who don’t live in the European countries, where Mars bars are found, you can use the American equivalent, a Milky Way.

  • 3 Mars bars/ Milk Ways
  • 2 oz of sugar
  • 2 oz of butter
  • 1 ½ oz of Rice Krispies cereal or generic equivalent
  • Milk chocolate for drizzle on top

  2. Cut up the Mars bars/Milky Ways into small pieces and add that into the pan as well.

  4. Spoon the mixture into a greased container and leave it in the fridge until it’s set, at least 30 minutes.
  5. Melt chocolate and spread over the cake and return it to the fridge to harden.
  6. Cut the cake into squares and enjoy!
