]]>Shakshuka is a classic North African dish. It can be eaten at any time of day as it has breakfast, lunch, and dinner ingredients. The sauce is made from tomatoes, spicy peppers, and poached eggs. Green shakshuka is different because it contains Swiss chard and dill. These veggies create that bright green color.
Tahdig features a crunchy bottom and layers of basmati rice, yogurt, and butter. The spices make this recipe a Persian classic. Cinnamon, orange zest, and saffron feature heavily throughout the dish.
Classic chocolate chip cookies are one of those recipes every baker needs. Eden puts a twist on the classic chocolate chip cookie by swapping out the chocolate chips. She incorporated halvah instead and it’s absolutely amazing. Halvah is made from tahini and sugar and comes in many different flavors.

]]>This salad is fresh and simple – the perfect way to start a meal. All you have to do is finely diced tomatoes and cucumbers and put them in a bowl. You can also add red onion or bell peppers. Chop up fresh herbs like cilantro, dill, mint, or parsley if you have them, and then dress it really simply with olive oil and lemon juice and the first course is done!
Start by putting some couscous into a bowl with a lid or a plate large enough to cover it. Mix in salt, paprika, and cumin, and then pour hot water over it and cover the mix for 10 minutes. Drain and rinse a can or more of chickpeas and roast them in the oven with the same spices or cook them on the stove.
An easy hack to dessert is to simply serve regular vanilla ice cream, but dress it up by drizzling honey and chopped pistachios on top. This also works great with frozen yogurt if you have it!

]]>This method requires you to wrap your fish in parchment paper, along with any aromatics so the fish can absorb the flavor. Cook the fish at 350 degrees for about 20 minutes for a perfectly flaky fillet.
Poaching is an extra healthy way to let the fish absorb flavor. Just pour liquid enough liquid over the fish just to cover, and heat until nearly boiled about 8-10 minutes.

This summer, try throwing some fillets onto the grill. They only take about 4-6 minutes to cook per side and you will have a perfectly cooked fish.

Frying fish is an awesome way to get it crunchy on the outside while allowing it to cook and get soft on the inside. Just made a simple batter for it, toss it in a pot with oil, and wait until it turns out golden brown.

Who doesn’t love quesadillas?! Not only are these black bean, cilantro, and avocado quesadillas mouth-wateringly good, they’re also really healthy.
What you’ll need:
One 15-ounce can black beans, no salt added, rinsed and drained, liquid reserved (or 1¾ cups cooked)
1 medium tomato, diced
½ small chile pepper (e.g., jalapeño, Anaheim), finely diced
1 tablespoon fresh lemon juice
1 medium garlic clove, minced
¼ cup finely diced fresh cilantro
2 teaspoons extra virgin olive oil
Eight 6-inch corn tortillas
¼ cup plant-based shredded cheese, optional
How you’ll do it:
1. In a small mixing bowl, crush the beans with a potato masher or fork, adding 1 to 2 tablespoons of the reserved bean liquid to make a thick, lumpy mixture.
2. Add the tomato, chile pepper, lemon juice, garlic, and cilantro to the beans and mix well.
3. Heat 1 teaspoon of the olive oil in a large skillet.
4. Spread ½ cup of the bean mixture onto two tortillas smoothly. Place them in the skillet, bean side up. Sprinkle each with 1 tablespoon of cheese, if desired. Top with another tortilla. Cook the quesadillas over medium heat for about 4 minutes, until the bottom side is browned. Turn over carefully and cook the other side for about 4 minutes, until browned.
5. Remove the quesadilla from the skillet and garnish with avocado slices and plant-based sour cream, if desired. Repeat the process again to make 4 quesadillas.
This recipe is geared towards beginners, serves up to 4 people, and only takes about a half hour to make. Perfect for a quick, nutritiously delicious meal!
