Step Into Fall With These Pumpkin Spice Muffins

Fall is pumpkin season and we couldn’t be more excited to throw on our cozy sweaters and snuggle in blankets by the fire. We’re here for anything pumpkin and these pumpkin spice muffins are giving us all the fall feelings. They’re perfect for a quick breakfast or a pick-me-up snack during the day. Ingredients:

Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup dark brown sugar
  • 1 tsp. pumpkin pie spice
  • Pinch Kosher salt
  • t tbsp. butter, melted

Muffins:

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. kosher salt
  • 1 tsp. cinnamon
  • 2 tsp. pumpkin pie spice
  • 1 cup canned pumpkin
  • 2 large eggs
  • 6 tsp. butter, melted and cooled
  • 1/4 cup sour cream
  • 1 tbsp. pure vanilla extract

Instructions:

  1. Preheat the oven to 350 F and line a muffin tin with liners.
  2. To make the crumb topping, in a medium bowl combine flour, sugars, pumpkin pie spice, and salt. Stir in the melted butter until crumbs form.
  3. Whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice in a large bowl. Add in the pumpkin, eggs, butter, sour cream, and vanilla and mix everything.
  4. Divide the batter into muffin tins and top each with the crumb topping.
  5. Bake until the muffins are golden brown and a toothpick comes out clean, for about 25 minutes.
  6. Let the muffins cool and then enjoy!
