Nothing is better than Grandma’s chicken soup on winter days. And if you’re looking for one just like you remember from your childhood, this one will do the trick. It’s hearty, quick, easy, and budget-friendly.

Ingredients:

  • 2 onions
  • 3 carrots 
  • 2 Parsnips 
  • 2 Bay leaves 
  • 2 tablespoons Parsley 
  • 5 whole peppercorns 
  • 3 celery stalks 
  • Whole chicken 
  • Chicken carcass
  • 3 cloves of garlic
  • Kosher Salt 
  • Dill, to garnish
  • Kneidlach (matzah balls), options

Instructions:

  1. Peel and chop all vegetables into big chunks or halves and add to your pot.
  2. Add bay leaves, parsley, and peppercorns.
  3. Once all your vegetables are in the pot, add the whole chicken and chicken carcass.
  4. Fill your pot with water so that all ingredients are submerged.
  5. Watch your soup as it begins to simmer and then boil (you will notice some foam forming). Don’t worry if your soup looks cloudy—it’s a good sign that you are on the right track. Simply remove the foam by skimming it off the top.
  6. Once your soup has reached a rapid boil, lower the temperature and simmer for 1 hour and 30 minutes. 
  7. Remove the chicken, vegetables, and bones from the pot, the easiest way to do this is to pour the soup through a colander.
  8. Strip the chicken off the bones and add them back to your pot and let simmer for another hour.
  9. Pour your soup through the colander one more time. You can either serve it up as is or let it cool down refrigerate it overnight and serve it the next day.
  10. Serve with fresh dill and bread on the side.

Soup will keep you feeling fuller for longer and it’s more effective for weight loss than consuming a glass of water.

Which Soups Should You Eat?

Unfortunately, not all soups are created equally. In general, clear broth-based soups such as egg drop, chicken, and vegetable soups are lower in calories than cream-based, chowders, and pureed soups. Stick with broth-based soups for your first course and if you’re craving a thicker soup, make it your main course. Sometimes, we can’t resist a cream of mushroom soup. Just make sure the soups you choose are high in protein and low in sodium.

If you’ve never had creamy potato soup, this is the best time to try this recipe. It’ll keep you warm during what’s left of this winter.

Ingredients:

  • 1.5 lb diced potatoes
  • 5 slices bacon
  • 2 cups warmed milk
  • 1 cup shredded sharp cheddar cheese
  • 3 tablespoons bacon grease or butter
  • 2 cups chicken or vegetable stock
  • 1/2 cup plain Greek yogurt or sour cream
  • 4 peeled and minced garlic cloves
  • 1/2 teaspoon freshly-cracked black pepper
  • 1/4 cup all-purpose flour
  • 1 teaspoon of sea salt
  • 1 cup diced white or yellow onion
  • chives, sour cream, bacon, shredded cheese for serving

Instructions:

  • Get a stockpot and cook the diced bacon until it becomes crispy. When it’s done, put it on a plate, making sure that you keep the bacon grease.
  • You only need 3 tablespoons of the bacon grease for cooking.
  • Cook the onion together with the grease for 5 minutes. You can then add the garlic and continue cooking for 1 to 2 minutes.
  • Include the flour and cook for 1 minute, while also mixing the ingredients together.
  • Add the stock in the mix together with the potatoes and the milk.
  • Wait for the soup to start simmering, then lower the heat.
  • Cover the stockpot with a lid and let it simmer for 10 to 15 minutes.
  • When the time is up, you can include sour cream, shredded cheese, pepper, bacon, and salt.
  • Your creamy potato soup is done. Top it off with extra bacon, shredded cheese, chives and any other toppings that you like.
