]]>The first three ingredients you’ll need are chicken stock (powder is just fine), fresh garlic, and soy sauce. Chicken stock will be your base, so start by boiling some in a pot. Use a heaping tablespoon of powder if that’s what you’re using. Don’t use too much or it will be too salty.
Crush 3 or more cloves of garlic and add to the pot. If you don’t have fresh, use garlic powder. If you like some extra zing, fresh ginger or ginger powder are a delicious addition to make a more authentic broth. This is also very soothing if you aren’t feeling well.
Finally, add your soy sauce. Start with a teaspoon and add more to taste. This is what will provide you with the umami flavor that defines ramen. If you like, try adding a bit of sesame oil and green onions on top.
Now you can add your noodles, and try dropping in a raw egg to cook for some protein. Enjoy!

]]>A dinner out with a date is nothing new or unique to winter, but a good ramen shop should be! There’s nothing like cozying up to a big bowl of steaming ramen as the temperatures continue to drop outside. Ramen restaurants usually also have fun and exciting seating and energy, perfect for keeping your spirits up.
Though this one is a little cliche, it is still really honestly worth doing! Ice skating is such a wonderful way to enjoy the great outdoors while getting in some exercise at the same time. Even if you’re no pro skater, you can laugh about it with your date and see their silly side at the same time.
Whether that be mulled wine, hot cocoa, or tea, invite your date over to your place and make them a homemade hot drink! This shows that you are invested in them by putting energy into something homemade, and it’s especially good if you’re trying not to break the bank.

One of the best fresh vegetables to buy is cabbage because it is very cheap and still has a ton of nutrients. Slice up either red or green and put it right into the broth.
The acidity will make the broth less fatty tasting and brighter. You can do that with limes or vinegar.

]]>Kombu is an East Asian type of kelp that is usually found dry. It provides a burst of umami for your broth and just needs to be cleaned slightly with a damp towel. To get the most of your kombu, soak it for a few hours in water and then cut slits in the sides to have the broth absorb it better.
Mushrooms, especially shitake, carry a lot of umami. In their dried form, their flavor is much more intense, perfect for making a dashi, or Japenese broth.

This is the mildest type of vinegar that you can find, which is perfect for adding just a bit of acidity to the dashi.
Although the ingredients above make for the perfect dashi, it still needs to be combined with a regular stock to mellow out the taste.
