Green Shakshuka

Shakshuka is a classic North African dish. It can be eaten at any time of day as it has breakfast, lunch, and dinner ingredients. The sauce is made from tomatoes, spicy peppers, and poached eggs. Green shakshuka is different because it contains Swiss chard and dill. These veggies create that bright green color.

Mediterranean recipes are quite famous for their many forms. They can usually be found in the form of a salad, a dip, or even a hearty dish. The main staple in Mediterranean culture is the bread and also an assortment of vegetables. Research shows that this type of diet is one of the healthiest in the world and can help delay the negative effects of diabetes.

Baba ghanoush is similar in texture to hummus, which is a chickpea-based dip. They both originate in the Middle East and they are satisfying and rich in tastes.

It’s Eggplant Based

While hummus is chickpea-based, Baba Ghanoush is mainly eggplant based. Its leaves a smoky and aromatic flavor in your mouth and it’s perfect to pair with vegetables and small side dishes. The cooked taste of the eggplant is best served with a neutral side dish like bread or fresh tomatoes for a balanced palette.

Ingredients

  • 2 cups of leftover couscous
  • 1/4 cup of herbs, cilantro, dill, parsley, mint, or a combination
  • 2 eggs
  • 1 1/2 teaspoons of cumin
  • 1 lemon
  • 3/4 teaspoon of salt
