You can’t beat an amazing broccoli salad filled with cranberries and cashews. Not only is it really healthy it is also really filling and tasty and filled with goodness. This is a great salad to bring to a BBQ for vegetarians and vegan guests as it is filled with lots of protein. Here is the recipe.

Ingredients

  • 4 Cups Broccoli, cut into small pieces
  • 1/2 cup Cilantro, chopped roughly
  • 1/4 cup diced Red Onion
  • 1/4 cup Dried unsweetened cranberries, roughly chopped
  • 2 Tbsp Sunflower seeds
  • 2 Tbsp Roasted salted Cashews, chopped

Dressing:

  • 3/4 Cup Roasted, Salted Cashews soaked in water overnight (105g)
  • 5 1/2 Tbsp Water
  • 1 Tbsp Apple Cider Vinegar
  • 4 tsp Yellow curry powder
  • 2 1/2 tsp Honey (or agave for vegan)
  • 1/2 tsp Salt
  • Pinch of pepper

Instructions

  • Drain the cashews and place them in a food processor with all the dressing ingredients and blend them together until smooth and creamy. It might take a few minutes.
  • In a large bowl, mix together the broccoli, red onion, cilantro, and cranberries.
  • Add the dressing and make sure all the vegetables are coated. Cover and refrigerate, for at least an hour, to let the flavors mix together.
  • Add the sunflower seeds and cashews before serving.
