Popsicles are one of the most refreshing summer treats, but making them can be tricky if it’s your first time. The first step you’ll have to make is buying a new set of popsicle molds, and here’s what you should know before you buy those.

Materials

Ice pops are made from many different materials, including plastic, silicone, and stainless steel. Plastic and silicone molds are much cheaper, but the ones made with stainless steel are more durable and popsicles tend to freeze quicker in them.

Size

The size of your freezer should determine the size of popsicle molds you’re buying. If you have a small freezer, or simply can’t free up any space for your popsicles, make sure to pick a smaller set that will fit right in.

Shape

You can get as creative as you want when it comes to the shape of your ice pop molds. It all comes down to personal preference, but keep in mind it could be more difficult to properly fill the pops with an unusual shape.

Friday afternoon happy hour is not complete without a gin and tonic in your hand, but today we bring you a recipe for something even better suited for hot summer days — gin and tonic popsicles. The ingredients are the same as for the drink but the whole experience is much more fun!

Ingredients

  • 5 tsp of powdered sugar
  • 4 tsp of water
  • 6.6 oz gin
  • 3.3 oz lime juice
  • 17 oz tonic
  • 10 slices of cucumber or lime
  • Popsicle molds

Instructions

  1. Mix water and powdered sugar and heat until the sugar dissolves. This is an optional step; you can skip it if you don’t want a sweet popsicle.
  2. Mix the syrup you made with gin, tonic, and lime juice.
  3. Add a slice of lime/cucumber to each popsicle mold. Pour the liquid over it.
  4. Freeze for around 2 hours, then add popsicle sticks. Put back in the freezer overnight.
