]]>This version of Philippine ceviche usually consists of vinegar and citrus fruit dishes to highlight the taste of the fish. It can be eaten on its own and is quite delicious served with white rice too. The Philippines is home to some of the freshest seafood in the world – no wonder their indigenous dishes are so fresh and unique.
Siargao is a beautiful island located 196 kilometers away from the Southeast of Tacloban city in Surigao del Norte. Besides boasting diverse watersports including one of the best surfing spots in the world- they also have delicious Kinilaw.
Their Kinilaw bowl is almost similar to that of a seafood Hawaiian Poke bowl and is served with fresh veggies and even mangoes – yummy! It’s great for post-surf food or even a light afternoon lunch.
Besides being a mainly sour seafood dish – it can also be quite hearty and sweet. To balance out the sourness, adding ripe mangoes can help to give it a little kick. This dish is usually served raw (besides the cooked rice) and is perfect for a light meal without the bloated feeling afterward. Thanks, Philippines, for this scrumptious dish!
