Ceviche is a popular Peruvian dish usually served cold or raw with sliced cucumbers and avocados. This citrusy seafood dish was loved so much by the Filipinos that they decided to recreate their own version.

This version of Philippine ceviche usually consists of vinegar and citrus fruit dishes to highlight the taste of the fish. It can be eaten on its own and is quite delicious served with white rice too. The Philippines is home to some of the freshest seafood in the world – no wonder their indigenous dishes are so fresh and unique.

Siargao’s Kinilaw

Siargao is a beautiful island located 196 kilometers away from the Southeast of Tacloban city in Surigao del Norte. Besides boasting diverse watersports including one of the best surfing spots in the world- they also have delicious Kinilaw.

Their Kinilaw bowl is almost similar to that of a seafood Hawaiian Poke bowl and is served with fresh veggies and even mangoes – yummy! It’s great for post-surf food or even a light afternoon lunch.

Flavorful Explosion

Besides being a mainly sour seafood dish – it can also be quite hearty and sweet. To balance out the sourness, adding ripe mangoes can help to give it a little kick.   • 450 g can smoked fish
  • 1 egg
  • 500 g potatoes, peeled and chopped
  • 1 cup breadcrumbs
  • 4 finely chopped spring onions
  • 2 teaspoons margarine
  • 2 tablespoons milk
  • 1 finely chopped capsicum

Instructions:

  1. Start by putting the potatoes in a pot with water. Once they’re cooked, remove them, peel and mash them.
  2. Add in the margarine and mix very well.
  3. Include the fish, capsicum, and the spring onions.
  4. Add pepper to the mixture.
  5. Form 12 fish patties.
  6. Combine the milk and the eggs in a bowl.
  7. Pour the breadcrumbs on a plate next to the bowl.
  8. First, put the patties in the egg mix, then in the breadcrumbs.
  9. Prepare a pan with oil, and start cooking the patties. You will need 2 to 3 minutes per side.

This method requires you to wrap your fish in parchment paper, along with any aromatics so the fish can absorb the flavor. Cook the fish at 350 degrees for about 20 minutes for a perfectly flaky fillet.

Poach

Poaching is an extra healthy way to let the fish absorb flavor. Just pour liquid enough liquid over the fish just to cover, and heat until nearly boiled about 8-10 minutes.
