Spoon the mixture into eight flour tortillas and top with the rest of the 10-ounce can of enchilada sauce and another cup of cheese, then bake at 350 degrees for 45 minutes and you’ll not only have dinner, but you’ll have lunch for the next day.

Just bake 25 minutes in an ovenproof skillet at 425 degrees and you’re good to go!
