Every busy adult knows the feeling. You come home from a long day at work with no idea what to make for dinner and no desire to make something.

But when you’ve got a family to feed, you can’t just pull out a ham and cheese sandwich, turn on Netflix, and call it a day. You’ve got to deliver a great dinner that tastes like you spent all day making it.

Worry not, because these recipes can save the day when you’d rather swallow a power saw than pull out a complicated kitchen gadget.

Beef Enchilada Casserole

Beef is always a popular ingredient for kids, and when you can get some Mexican flavors into the meal, you’re likely to have a hit on your hands.

All you’ve got to do is cook a pound of ground beef and mix it with a 16-ounce jar of black bean or corn salsa, 1/4 cup of enchilada sauce and a cup of Mexican cheese. Spoon the mixture into eight flour tortillas and top with the rest of the 10-ounce can of enchilada sauce and another cup of cheese, then bake at 350 degrees for 45 minutes and you’ll not only have dinner, but you’ll have lunch for the next day.

Don’t forget the sour cream!

Tater Tot Skillet

Tater tots are another very popular food item, and this dish allows you to get some other good stuff in there.

A pound of cooked ground beef mixed with a cup of nacho cheese forms the base in a skillet, and when you cover it with 3/4 cup of frozen peas, a cup of shredded cheese and a 16-ounce bag of tater tots, you’ve got all you need for a great meal.

Just bake 25 minutes in an ovenproof skillet at 425 degrees and you’re good to go!

Ravioli Bake

Adam Carolla once said there’s nothing you can put in ravioli that’s bad. That might not be quite true, but you can have a lot of fun with this.

Cook two 9 oz. packages of ravioli according to directions and drain them, making sure they’re cooked al dente and ready for sauce. While draining, mix a jar of your favorite pasta sauce with a teaspoon of dried basil and heat for five minutes. Stir in the ravioli and place in a 9 x 13 pan, then top with two cups of mozzarella. Bake 10 minutes at 400 degrees and it’s an Italian feast!

When you’re exhausted from a long day at work, it can feel so easy to reach for the phone and dial the number for delivery. But with these recipes, you can resist the urge, eat healthier and save some money!
