1 small onion
100 ml vegetable stock
1 garlic clove
1 teaspoon rapeseed oil
200 g tinned chopped tomatoes
a pinch of smoked paprika
30 g red lentils
freshly ground black pepper
Chop the onion and garlic clove in small pieces.
The lentil tomato soup takes 10-30 minutes to make. You can start by getting a pan and heating the oil. Start cooking the garlic and onions for 2 minutes. When you notice that the onion is softer, you can include all of the other ingredients.
Wait for the soup to start boiling, then lower the heat. Let it simmer for around 20 minutes. Add black pepper to your taste.
This soup tastes best if you serve it hot, but that doesn’t mean that you can’t save it for later as well. You get such a delicious meal with the simplest ingredients in less than half an hour.
