This rule seems to be based on the idea that all fish are the same. This is, of course, nonsense. In fact, there are many fish that go very well when paired with a red wine such as tuna and swordfish.
Don’t be afraid to go with your instincts when pairing wine with foodstuffs.
There was a time when this was probably true, but today’s vineyards have learned from that era. Many wines are simply better preserved with a screw top than with a cork. The plastic prevents oxidation and the wine was never meant to be laid down for years to mature. So, don’t let the cap put you off – judge the wine on its merits instead.
More silliness when it comes to food pairing. Champagne can, in fact, be paired with many foods and it’s quite lovely when drunk with a meal.

No, it isn’t. Not only are French cellars generally much cooler than you might think, but wine is supposed to be served to your taste. If you like your reds cooler than room temperature, don’t be embarrassed to drink them that way.
This may be the worst “rule” of all. When you cook with wine, you evaporate the alcohol and change the flavor chemicals completely. What you should be doing is cooking with wine that you wouldn’t drink – your food will taste great and you won’t be wasting good wine.
