Native to Andalucia, Spain, gazpacho is one of the best ways to keep cool. To make it, blend together watermelon, cucumber, jalapeno, tomato, shallot, cilantro, mint, lime juice and olive oil until smooth. Chill and serve with herbs or extra bits on top.
