Cookies for breakfast? Who came up with such a thing? These peanut butter oatmeal cookies are packed with whole grains and protein, which makes them great for breakfast. Check out the recipe below!

Ingredients:

  • 1 tablespoon refined coconut oil
  • 1/2 cup creamy, so-salt added peanut butter
  • 1/2 cup maple syrup
  • 1 large egg white
  • 1/2 teaspoon of vanilla
  • 1/2 cup whole-wheat pastry flour
  • 1 cup rolled oats
  • 1/4 cup protein powder
  • 1/4 teaspoon baking soda

Instructions:

  1. Preheat the oven to 375 F and coat a cookie sheet with nonstick spray.
  2. In a large bowl stir coconut oil, peanut butter, maple syrup, egg white, and vanilla.
  3. In a small bowl mix flour, oats, protein powder, and baking soda. Pour the mixture of the small bowl into the large bowl and stir until its combined.
  4. Scoop 2-tablespoon sized portion and roll them into balls before placing them on the sheet pan. Place them with 3 inches between them and flatten them with your palm to about 1/2 – 3/4 inches thick. This should yield about 16 cookies.
  5. Bake for 6 minutes on the bottom rack and then move them to the top rack for 6 minutes. The cookies are done when the tops are golden brown, but still soft in the centers.
